    I know from experience the most important "ingredient" is that pair of gloves. The first time I made my own hit sauce I knew it was going to be great. I had fresh peppers from a friends garden, fresh garlic, and fresh onions and fresh tomatoes. I did not use gloves. My hands burned for 3 days and I cannot begin to describe the pain when I took my contacts out. I threw those away. I decided I hadn't made hot sauce but discovered a cure for arthritis! I found out later I was 1 pepper shy of what they use when they make capsaicin. Never made that mistake again!

    Tabasco brand pepper sauce only uses the bright red ones

    Thanks for sharing this! I am going to have my husband grow these for me to make this sauce. I made canned pickled sliced jalapenos this year for him as well as some diced jalapeno/poblano peppers.
