  • Southern Pepper Sauce or Pepper Vinegar? You pick the name. Regardless of which you choose it is just tasty and easy to make. I go over three different ways I have made it in the past depending on what I had on hand at the time. I thought you had to heat the vinegar

      You do not have to heat it.

    Love the recipes. I always use boiling hot vinegar that way you don't have to poke the peppers. It opens the cells in the peppers for you. I learned this from my grand mother 50 years ago

    Took me two times to remember what I was going to ask. I'm glad I watched till you did the dried peppers, which gets me thinking. Would putting a little roast on the dried peppers help get the heat out faster? Also, could you mix dried and fresh, like the dried might get the initial pop. But the fresh last longer?
    This is something I'm glad I came across, because for many questions I can just try myself to find out. Thank you for the demo here.

      @13Peppers  หลายเดือนก่อน +1

      I don't think it will get the heat out faster but may give it a roasted / smoky flavor profile which would be interesting to try.

    Hi what is the shelf life for this? My mom used forever and since she passed I just forgot to ask how long it is good for. The one thing that produced like crazy this year in my little garden pots is the chili peppers

      I only replace the peppers when they start to fall apart. Usually 6 to 9 months. but constantly replacing the vinegar when emptied

    After you use up all the vinegar in the jar do you add more vinegar or trash the peppers?

    • @13Peppers
      @13Peppers  หลายเดือนก่อน +2

      I just keep refilling the vinegar until the peppers start to break down then start all over.

    I had 3 pepper plants that I thought were all Shishito pepper that I threw into one big pot. Turns out one was a Tabasco which started the smallest and sickly and ended us taking over the pot and 2 completely non spicy mini bell pepper plants that never got bigger than 18” but gives me non stop tiny mini bell peppers that one out of 20 are hotter than a Tabasco pepper. I wonder if the roots are entangled 😂. I’m gonna make this with these peppers coming in now

    • @13Peppers

      That sounds great getting non stop mini bells. And even better that you get that 1 in 20 surprise. keeps it interesting.

    Hi....what is the shelf life on these? Do you keep in refrigerator or just on the shelf? Do you add vinegar as you use it to keep peppers covered? Thanks

    • @13Peppers
      @13Peppers  ปีที่แล้ว +1

      Hello, I do not know the shelf life on these. The ones on the video was made just before Thanksgiving 2022. With my wife only making her greens 4 or 5 times a year it is not used that often. Between uses I do top it off with vinegar to make sure the peppers are covered and just leave it on the pantry shelf. For me they last more than a year with my use and I only make a new one when the peppers start to break down. You can tell by the sediment that starts to appear on the bottom of the container. Now if I was using it more often then I would replace it sooner. Hope that helps. Thanks, Ralph

      I no longer add raw garlic cloves, seen em start to bubble so now I smash em up. Guess you could can them also.

    I put the shriveled up red peppers in a ziplock bag for later use in vinegar. Why are they turning moldy?

    • @13Peppers
      @13Peppers  หลายเดือนก่อน

      That's a good question. Are you saying the peppers in the vinegar are turning moldy? I have a bottle that is over a year old that the peppers have broke down and need replaced but it is not moldy. If its the peppers that are out of the vinegar then they have not been dehydrated enough and have just enough moisture to start molding. Freezing is always an option to save the peppers before use.

      They have to be completely dry to store them unless you freeze them.
