I just made these cookies today, 6 yrs later after my first time viewing this video. They are delicious. Simply delicious. RIH Chef Eric. Thank you for all your videos and life lessons.
Wonderful recipe!!! Thanks sweet Eric 🤗. Here are Ingredients: 1LB butter (salted), 1 Cup Granulated Sugar, 2 tsp vanilla, 1 tsp butter extract, 1/2 tsp salt, 4 Cups Sifted All Purpose Flour. Directions: cream butter and sugar, add vanilla and butter extracts and salt. Scrape into large bowl of flour and mix by hand to incorporate all together. Using medium cookie scoop, place scoops onto cookie sheet lined with parchment paper. Press 3 fingers into each scoop. Bake at 350 Fahrenheit for 10-15 minutes (cookies will be white on top and lightly browned on bottoms.
I just found this video in 2022. I was a CPS student and I’ve been dreaming about these cookies… Now that I’ve turned 30, for some reason, I like to consume comfort foods. Lbs this recipe was so accurate and besides that, I want to show love to the awesome gentleman who gave such great advice and this delicious recipe. Thank you sir!!! You are wise and I am so humble to have stumbled across this video. Not just for the recipe but for the knowledge and advice. Much love ❤❤❤
Chicago is my home town. Thanks for sharing! I knew a lady who sold those lunchroom cookies back in the day. I am here in 2020 during the coronavirus shut down! Be safe all!
Sorry we are still on lockdown in ChiTown, but on a rainy or cold day, you could add a lot of cheer to some folks by making these cookies. I have made some for a Senior Citizens, and CNA's that I know and they loved them. I added yellow Gel food coloring to the butter and sugar, so the dough comes out bright yellow. After the cookies were cooled, I drew a little white mask on them. They looked so cute.
Lord, I hope these are the cookies they use to make in school, from when I was in elementary school in Oklahoma City. They just melted in your mouth , all this buttery goodness 🤤🤤( that's drool 😏)
Mr. Eric what a treasure you are! Appreciate the transparency and life lessons wrapped up in a butter cookie recipe and from a biblical perspective. Blessings in 2024! TY very much!
Wow! 6 for $5. I really got to change my prices, my family said I was giving my cookies away. 12 for $6... Thanks again for your tips Eric and may our God continue to show you favor.
I would buy Fenger HS butter cookies just about everyday during my lunch break. I have wonderful memories of those lunchroom butter cookies. Eric I remember you. I graduated in 83'. Fenger Titans
Thank you Eric! 🥰 Your recipe and directions were spot on, my cookies came out perfect everybody loved them. Thank you so much for sharing your amazing recipe. My friend made butter cookies all the time but she would not give me her recipe, by the grace of God I stumbled up on your video now I'm making cookies for my friends and family and getting customers. I honestly think she's using your recipe because my cookies taste exactly like hers 😂 I kid you not. God bless you! 🙏😇. Looking forward to more recipes. ❤ Yummy yum yum 😋😀
Hello Eric, I'm from Chicago and loved these cookies. I use to buy these cookies almost every day. I had one friend who never went to glass but she will come to school just to buy these cookies. They were the BOMB thanks for sharing your recipe God bless you.
Great job Eric. I love how you do what you got to do when the oven is broke. You do not let it stop you. Now give that baby a cookie. I cant wait to make some.
Yesss! I was searching for this recipe. So glad I found you. I've been telling my children and grandchildren about the cookies and now I'm going to make them. Julian Jaguar here!
Yep! your recipe is the exact taste I remember from my school days in the burbs of Chicago. FINALLY! Thank you so much for sharing! I am locking this recipe down for good.
Thanks for the recipe! I used half of the ingredients to make a small batch and they were a winner. Can't wait to make the full batch! You are a blessing for sharing.
Yes, I would half the recipe too for my small family, but appreciate having the double recipe for church picnics, etc. I noted that the creaming process of butter and sugar was very fluffy (air infused). I will look for this consistency in my cookie dough batter. My first thought was that the cookie dough would be somewhat "stiff" if beaten too long, say more than five minutes. But it appears the science of this cookie recipe comes together quite nicely. I will use less white sugar/and a combo of white to brown sugar to reduce the sugar content and attempt a heart healthier version with a little less butter. TY Mr. Eric!
Thank you Eric for all the good advice and if people arent happy about baby noise they dont hafta listen I've always wanted to bake but my baking skills are terrible I've always worked 2 jobs I wont ever apologize for working I had to becuz I love my family I'm 70 and I still work God blesses me greatly🥰🙏take care and God bless you thank u for caring to teach others ❤
New subscriber! I'm from Chicago too and I loved this video. I'm making my grocery list now and will be trying your recipes, so please keep them coming.
THANK YOU! You are the first person I've seen "snap" the cookie. Everyone else bites into it and it appears softer and more like a cake. I have tried similar recipes over the years and just can't get the snap. I am going to try yours tonight! Thank you again, for sharing!
Yes, I had to look up the science for why these particular cookies had "snap". It may be that as the cookies baked a little longer giving the pleasing golden brown color the more moisture was consumed in the dough. Spot on Mr. Eric! TY
I’m baking a batch now, and I’ve followed the recipe just like you said. My house smells amazing! Can’t wait to try them! Thanks Eric 🙏🏾 God Bless you!
Hey Eric I just found your channel today thanks for the butter cookie will make them and listen to your advice on how to make them exactly the way you did thanks ❤
Hi Eric. I am from Chicago and went to Cps. Thank you for your recipe and video. It was very helpful. I tried another recipe in the past and it was a fail. I used your recipe yesterday with my sons and I must say these cookies came out delicious and brought back the memories.🙂
I think you have the most accurate recipe on how to make these butter cookies. I looked through all the videos they have on TH-cam. But the texture of your cookies is exactly how I like mine. I hope mine turn out just right, Thanks to you. God bless you Unk 😉🖤
Best cookies, and tastiest cookie dough ever! I used 2 sticks of salted butter and 2 sticks of unsalted butter…3/4 teaspoon of course Kosher salt. I left out the butter flavoring, because it’s not needed. I added an extra 1/4 cup of sugar. I used the paddle attachment for the kitchenaid mixer, and creamed the softened butter and sugar for about 10 minutes..stopping twice to scrape bowl down. Added the sifted flour/salt right into the KitchenAid bowl in 1 cup increments..mixing only 10 seconds after each addition..so as not to overwork the flour.. The cookies literally melt in your mouth. They are AMAZING,and yes, you could EASILY package these up beautifully (Amazon has all the packaging materials you need) and sell at flea markets or church bake sales. These are the best butter cookies I’ve ever had. You won’t be disappointed. I’ve made up 5 batches of dough for freezing…for the coming holiday season. Rest Well, Eric❤️
Hi Eric! My husband grew up in Waukegan and I grew up in a small town next to Great Lakes Navy Base, called North Chicago. So I’m so happy I found your special recipe! Greetings from another small town, Winthrop Harbor, Illinois! New sub!

You didn’t say in the video, do I need to use salted or unsalted Butter? I can’t remember. I appreciate your honesty and down home attitude. Being from the south, it was the first thing I noticed and now I am a subscriber. Let me know please: salted or unsalted butter.
