- The best chicken soup doesn’t need much - just tender poached chicken, hearty winter vegetables, and fresh herbs simmered in chicken broth. It's a simple combination that’s a cozy hug for your taste buds and the best kind of immunity remedy.
I’ve been making this exact chicken soup for over a decade now. It's my go-to recipe when the cold weather strikes and I'm craving something light, brothy, nourishing, and warm. And while many chicken soup recipes often contain pasta noodles, they're definitely not needed. I swap those out for parsnips which are equally filling, but add a deliciously sweet flavor that works so well with the fresh herbs.
If you've made my chicken salad recipe you know that tarragon pairs beautifully with chicken, and I'd say it's the one ingredient that really gives this soup that "wow factor" as well. I've made this recipe several times. It's always perfect! I switch out 2 of the garlic cloves for nab of minced ginger. So good!

Tried your recipe … I must say it came out really well. Me and my wife simply loved it. Coming from India, we both were literally bored of having spicy food and soup … this was really refreshing !! Thank you !! 😊
To make it even more nutrient dense one can take another step via making bone broth from the chicken bones/carcass using up all vegetable scraps and mushroom cut offs (for umami flavor) as well. If you add a swish of vinegar to make the home cooked chicken stock actually gel up. 1cup water per half cup bone broth will give a good stock.

Thanks for sharing this healthy delicious recipe 🤗 I do mine in the slow cooker so it's all done by the time I get home but this is a great alternative and I love the simplicity of shredding the cooked chicken instead of having to cube it. Scrummy!

Had leftover beasts from a rotisserie chicken, not a fan of those - they’re so dry. so thought I’d try making a soup of it and picked this recipe since I had most ingredients already and it’s low carb. it’s awesome! And some lemon really did brighten it up. Incidentally for broth, I use Better Than Bullion. That’s the best, and make just what you need.

What were those glass containers used to store the soup at the end? I didn't see a link for them in your description.
Never tried mixing tarragon with any other herb, usually use tarragon for this champagne sauce for salmon. I usually make an Italian seasoning blend, (equal parts of basil, oregano, rosemary, and thyme) this is my go to for my du jour.

Very good! I made it with one bone in breast and 2 bone in thighs. Takes longer. Used a local meat place that brews their own ‘in house’ chicken broth. Don’t like boxed. Great recipe 👏🏻
This is very similar to my chicken soup, but I usually cook the chicken breasts in a skillet...until no longer pink and then I poach in the liquid. I also shred with 2 forks! I also add grated ginger. Will try tarragon next time!

Love what u do for us. but as a cook myself it makes it is much better when using cut veggies to give it in cups instead of like one carrot. Carrots and other veggies come in all sizes so for those that might not be a cook it can be frustrating for the soup to turn out to dry or other ways and leave then discouraged. Even for me as a cook would rather have a true measurement. Thanks, hope this helps

I love the simplicity of having only the number of veggies. Less measuring (one step less) and easier to remember the recipe afterwards.
Looks delicious. Fresh herbs are so expensive at the food store right now and not always so fresh. Can't grow them here this time of year. Would dry herbs not benefit the flavor of the soup? Thanks for sharing. Stay well and safe.
