Made this last night. My Wife said it was the best chicken I've ever made. We only tried it last night. Tonight I reheated it for dinner and made the basmati rice and green beans. Wow. Outstanding!! Thanks for the side dish recommendations. Loved it!!
How long did you marinate it? I’d love to marinate for 5-6 hrs but worry it would be too “lemony” and no chicken taste! Very novice cook here, lol Thanks in advance!
I would like to offer another side dish for this chicken.. You take 4-8 potatoes (depends on how many you want to serve - even more if you need)...peel and cut each potato into 12 cube-sized pieces...put them in a casserole dish...add the juice of 1-2 fresh lemons...1-2 tablespoons of mustard...salt, pepper, oregano, 1-2 tablespoons of honey ...and the juice of as many fresh oranges as you need to cover the potatoes (ABSOLUTELY NO WATER...the potatoes bake in the orange juice, if the potatoes need more liquid to continue baking just add more orange juice)...olive oil.....bake at 180°C as long as needed for the potatoes to become soft.. (you can start with half covering the potatoes with the orange juice at the beginning and just keep adding more juice until the potatoes become nice and soft)....you can also add 3-4 whole cloves of garlic.......(I know the orange juice sounds a bit strange so make a small batch the first time you try this but believe me it is really tasty!!!)... My mom sent this video to me hoping I'd make it for dinner one night. Eating it as we speak - absolutely DIVINE. So delicious.... I added 1/3 cup lemon juice instead of 1/4 cup because I really wanted that lemon kick. I also added some rosemary that I grinded into a powder using my mortar and pestle. Oh my goodness, I cannot recommend this enough!!!! If you're on the fence about it, just give it a shot!
I’ve got a recipe for this. Thinly sliced potatoes to line the bottom of your roasting pan, place chicken thighs on top, sprinkle generously with thyme, a bit of salt and pepper (to taste), scatter cubed butter lumps over the top, squeeze lemon juice over the entire thing, and bake. Baste chicken occasionally. Serve with some lemon zest and the sauce. I usually pair mine with broad beans.
@@TheCaptainMan yeah because I cut them relatively thin. But here’s a handy tip: cut them into 1cm slices, place in a pan of cold water, bring to the boil and turn off. Leave them for 5 minutes, drain and then layer them. I do this for chips, sliced potatoes and roasted potatoes. It really helps. Nothing worse than an underdone potato. 💕

I tried this recipe yesterday since the weather was nice for early August in Southern California… which means I could use the oven. We loved it! Only modification was that I used chicken “tenders” from Costco and cooked at 350 F 30 min plus 5 min broil. It was perfectly cooked, super tender. Next time I will add the rice rather than salad. Thank you!
I did your original recipe which added rice into the chicken dish and I added a red pepper plus spinach to give the dish more colour It has been a terrific success either way I never have any left overs!

Loved it. When I first try a recipe, I usually follow the instructions / ingredients for the first time, then modify to suit my tastes. No mods necessary, it was perfect. In my case, I used your recipe on party wings (long story short, I am trying to replicate some Greek / lemon chicken wings form a restaurant that closed a few years ago). Baked in throw away aluminum pan 400dgrs for 1 hour turning (4) times. Browned both sides a short time on broil. Next time I will try the thighs. Thanks again!
My family and I love this recipe. I don't use olive oil while cooking because it gives a bitter taste, so I swapped it for grapeseed oil. I also added paprika and bell pepper paste. Thank you ❤

My kid thought it was too lemony 😅 I liked it. I had only 3 chicken breasts since we are a smaller family. I would have done a little less lemon juice but it was delicious. I added a side of tzatziki sauce on the side last minute which balanced the strong Lemon out. It was better.
Simple is good, and with the easy prep goes my being prepped for a busy week ahead with salad topping, re-heated & so many variations. Thanks for keeping things so delicious with ingredients we can easily get. Great pictures too.

I saved this recipe and made it on this beautiful Sunday evening. It is absolutely Delicious! The only thing that I did differently is that I added some rosemary and a few pats of butter to the chicken. There was so much pan drippings within the dish I decided to just use it to put over rice. I've read, and tried through experimentation, that when cooking with olive oil, you're as well off just using plain olive oil, not extra virgin. Once heated, any additional benefits from the extra virgin variety apparently disappear in a puff of smoke (literally). The difference in price makes it a no brainer for me to stock both types - one for cooking, the other for making salad dressing and the like. Wonder if you've got a view on that - I'm no expert, but my Scottish heritage makes me 'careful' with my spending, lol.
Yummy! So I want to make this using some bone in chicken breast because I bought a value pack and I don’t know what to do with it besides shredding it for recipes like tostadas or enchiladas 😅 Do you think it would turn out ok? Any tips? I usually do prefer to marinade and roast chicken thighs or a whole chicken but I gotta work with what I have because food is so expensive now a days 😩

No Dijon mustard in our Greek lemon chicken. It’s just a tradition at home. I agree with adding lemon potatoes.

Try adding slices of potatoes for a complete and very lazy meal! Had it with a friend last week and we agree it’s our perfect delicious lazy dinner.

I made and love this recipe! What I did is place the chicken in the bowl with the marinade, that I mixed the marinade in. It saved one bowl to wash!

1:00 mix the salt with the lemon juice (or water-based fluid likevinnager) first. Salt doesn't dissolve in oil.

Great looks good. I usually make slices into the skin. Gazebo room Greek salad dressing is good if you like shortcuts.
I've read, and tried through experimentation, that when cooking with olive oil, you're as well off just using plain olive oil, not extra virgin. Once heated, any additional benefits from the extra virgin variety apparently disappear in a puff of smoke (literally). The difference in price makes it a no brainer for me to stock both types - one for cooking, the other for making salad dressing and the like. Wonder if you've got a view on that - I'm no expert, but my Scottish heritage makes me 'careful' with my spending, lol.

Yummy! So I want to make this using some bone in chicken breast because I bought a value pack and I don’t know what to do with it besides shredding it for recipes like tostadas or enchiladas 😅 Do you think it would turn out ok? Any tips? I usually do prefer to marinade and roast chicken thighs or a whole chicken but I gotta work with what I have because food is so expensive now a days 😩
