- Pad Kra Pao
Ingredients
* 1 tbsp light soy sauce
* 1/2 tbsp dark soy sauce
* 1 tbsp fish sauce
* 1 tbsp oyster sauce
* 1.5 tbsp palm sugar
* 6 cloves garlic
* 5-7 red Thai chillies
* 3/4 cup long beans(cut into small pieces)
* 1/4 cup neutral oil
* 2-3 eggs
* 1.5 lbs ground pork/chicken/beef
* 2 cups holy basil or Thai Basil
* Hot jasmine rice
Instructions
1. Combine light and dark soy sauce, fish sauce, oyster sauce, and palm sugar.
2. In a mortar and pestle, grind together chilies and garlic into a paste.
3. Heat oil in a wok on medium high heat and fry egg until edges are crispy and the yolk is runny. Remove egg and drain half of the oil.
4. Sauté chili garlic paste until fragrant(less than a minute) and cook the ground pork until water has evaporated and the fat starts to render and sizzle.
5. Add long beans and sauce and sauté for a few minutes before adding holy/Thai basil.
6. Cook for a few minutes until leaves are wilted and serve with rice and the fried egg on top.

Holy Basil = Kra Pao
Thai Basil = Horapa
I personally prefer mixing 70% Kra Pao and 30% Shrubby Basil (Cumin Leaf) , it made the dish a little bit more complex without changing the aroma notes of the dish that much as using Thai basil.
@@boobee7907 ahh, then I understood wrong. Where i'm at, horapa = sweet basil. Then i'm absolutely against it, because for me it's strictly only holy basil.

One of my fav meals and one I make at least 2-3 times a month. And this is exactly the way I make it! Holy basil is SO hard to find but when I do, I grab it and pad ka pow is what’s for dinner!
when i was on a vacation in thailand, this dish was one of my absolute favorite. Very simple and yet very flavorful. I definitely prefer it over pad thai.

What did you replace the basil with?

Great job and super authentic!! One could argue that the long beans aren’t but more veggies never hurt nobody! Adds good texture, too!
My favourite thai dish!
As a kid my friends dad made it for us. He used to live in Thailand and was a home cook. This dish blew my mind at the time and it's been a staple ever since! My tip is to really crisp up the meat and use as much chili as you can endure. The chili combi ed with the Holy basil takes this dish to another level.

Wonderful, classic Thai dish. Hard to find in North America. Much easier to make than pad Thai.

Pad Kra Pao is the best Thai dish out there! But I’ve just discovered a variation of it with egg plant wich is even better 👌🏼 it’s called Pad Makua Yao I believe

My favourite dish of all times muh sab, and even with the right (ground!) protein. 3 garlic cloves and 3 chilis for one person is ideal. 4x4 for 2-3 guests that don’t like it too spicy.

I'm Thai. The real Pad Kapraw doesn't have yardlong beans, but that's okay. You can add baby corn as well.
It's a menu that you can put anything in. I put sausage or squid.

Holy basil and Thai basil are very different, I know they're hard to find, but if you somehow found one then definitely grab them, it will be worth the extra hassle
also long bean in Pad kra pao is like pineapple on pizza, while I don't think authenticity is that important, try making one without the long bean, or add stuff that you think might make the dish better, for me though, no long beans 😂
I’m a simple ass white dude - I’d be happy eating white rice with chicken breast cooked seasoned and some lemon 😂😂 but Asian food man it has to be the best looking or at least the most flavourful looking food. Everything just looks so crazy tasty

In Indonesia we have similar dish like this. But replace the meat with tempeh.
