    I am Thai and study in UK. I can't find holy basil as well, so I use regular basil and add a dash of white pepper on top to mimic the peppery of holy basil. Make it taste closer to the real Kraprao :)

    Holy Basil is a must, that is the kra pao of the name. There is no real substitute for it but it's hard to source. It goes bad about a day after picking the stalks from the plant and does not freeze well. Kra Pao with crispy pork belly is the ultimate :)

    For years I've been trying to find a good recipe for Hot and Sour Soup. We had a local restaurant that made the best but unfortunately they moved back to Thailand and we're still craving it!
    This soup was so delicious and perfectly balanced with the right amount of heat and sourness! Just thinking about it makes my mouth water and I long for it again!
    We've tried many other restaurants over the years and none have ever come close. 😔
    Do you happen to have a recipe to share? I would be eternally grateful, I really need this soup again before I'm gone! 🙏

      It's not a curry soup but a clear based broth. With mushrooms and tofu, red pepper flakes for the heat and vinegar for the sour and a few other things that makes it so good! It has a thick broth, maybe arrow root?
      I've searched for recipes every where but I can't find one like I tasted. This mother-in-law from Thailand makes magic in a bowl and the recipe probably isn't even written down!
      If I ever taste it again, I'll know it's the one! I've been searching for 25 years and I won't give up until I taste it again!

    I make this dish a lot. The flavor is a lot better if you put the garlic and Thai chili peppers in the oil first and fry it for a minute before adding the meat. Also, the sauce measurements in this video look like it'll be way too salty. For the same amount of meat, I use a similar amount of oyster sauce, sugar, and black/sweet soy sauce, but I only use 1 Tbsp light soy sauce (a 50-50 mix of Golden Mountain Seasoning Sauce and Healthy Boy Brand Mushroom Soy Sauce) and only 1 tsp of fish sauce. The video recipe's suggestion of 2 Tbsp soy sauce with 1 Tbsp fish sauce and 1 Tbsp oyster sauce even looks overly salty on paper!

      Many of us Thai like this dish to be kinda smoked and dry which adds extra smell and flavour so it is needed to fry the beef until the internal moisture are gone and meat becomes crusty. You wont be able to achieve that if you put garlic and chillie in first since they will be burnt. Just my 0.02$.

    I've done most of your recipe in the past and they all were amazing. Tried this one and was heavily disappointed, I was already affraid that 2 TBSP of Soy + 1 TBSP of Oyster + 1 TSB of Dark soy for 1.5 TSP or sugar was too few to balance so I added more sugar and it stil ended up being so salty it was completely unedible. Usually your ratio are at least 2/1 in terms of salt/sugar so I'm a bit confused but it was probably me doing something wrong. Any help would be appreciated

    • @pachch
      @pachch ปีที่แล้ว +5

      Thai restaurants especially street vendors made fried eggs that way, crispy on the bottom and you can choose the doneness of the yolk as some prefer a runny yolk while others prefer a cooked yolk. And a funny fact, fried egg could be eaten with almost every dish in Thailand. Serve it on top and that makes the dish more appetizing and more delicious. (Trust me, I'm Thai 👍👍)

    The word "Kra pao" means holy basil. You should have called this dish "Pad Horapha" as Basil or sweet basil (as you have used in your video) in Thai is "Horapha". But really, you should not use regular basil, it has a totally different flavor.

    Most asian supermarkets in UK you can get kra pow. I like the way you've made the dish very dry , but really not sure about using European basil

      There is a Thai shop near me and it gets Holy Basil imported but it has max 3 days before it is unusable. It doesn’t keep well after picking and packing like other herbs.
      An Indian grocer used to have it as it is used in South Indian temple rituals. Apparently it grew near temples in India and that it is how it got it’s name ‘Holy’

      @@boroiasar12 ive tried but without success even on a heat mat and using grow lights. It was Thai seed and I dont know how old they were. The packet had the ‘thai year’ printed on it. I’ll keep on trying though. I can get it….there is Thai Isaan shop not far from me that gets deliveries on a Tuesday. If i go on that day I can get relatively fresh Holy Basil but if you go on a Friday then it’s already looking sad and turning black.

    ผัดกระเพรานะ ไม่ใช่ผัดโหรพา ตามหลักต้องใส่เรื่องพริกกระเทียมก่อน เพื่อให้ กลิ่นกระเทียมพริกหอมขึ้น
    หลังจากนั้น ค่อยใส่เนื้อลงไป ผ้ด แล้วปรุงรสตามชอบ พอใด้ที่แล้ว จึงใส่ใบกระเพราลงใป แล้วยกขึ้นเลยนะ

    so Holy Basil, Thai Basil, and regular Basil are 3 different things?

    • @AaronandClaire
      @AaronandClaire  5 หลายเดือนก่อน

      Yes, they are 3 different things. 🤣😆What I mean by that is Holy Basil is the one this dish originally calls for, Thai Basil is just any basil from Thailand, and regular Basil is Italian Basil! 🙌🙌🙌

      @@AaronandClaire that's good to know... I am taking this dish in California in a Thai restaurant: Gra Pow seafood... and it tasted so good. So I am suspecting it is not using Holy Basil, as it is hard to find in the US. So it probably is using Thai Basil. It too has a fried egg on top of the rice.

    Pa pao is mean thai basil. If you use basil it gonna be basil stir fry (pad ho ra pa) not pad ka pao. It's also delicious but smell and taste are little bit not the same(delicious though 😂😂) However i kind of understand that it expansive and hard to find thai basil in korea and other cold country.

    As others have already mentioned, holy basil is not always available in the UK & I find pork, prawn, or chicken complements the dish far better than beef. Also, minced meat of any description in the UK isn't good meat, My Suphanburi wife always minces a piece of meat herself with two heavy knifes.

    • @AaronandClaire
      @AaronandClaire  10 หลายเดือนก่อน +1

      The sauce itself is not spicy at all, so you can skip the fresh chilies or use bell pepper just for the texture.
      FYI, you can always make our dishes less spicy by reducing the chili pepper flakes or skipping the fresh chilies. Hope you guys enjoy it! 😁🙌

    No no no dude, you gotta put garlic and chilli into the pan first and wait a bit second untill the chilli smell's kick up then put the meat then sauce. Once the meat is rare then put basil in.
    **garlic and chilli first is the key
