That stuff is be best all around rub I have ever found...hands down!! I know the label says you use it on brisket in comp but seems to lend really well to pork too.
Many thanks NBL yes I know of Kansas bbq store, but living in the UK the shipping is a killer. We have a couple of UK companies that sell many US pitmasters products and make obtaining such products easier. Unfortunately Joe products an't stocked at the moment, lets hope it changes soon!!

What was that last spritz before closing the lid? Just water?
I use apple juice. not sure if it makes a difference but thats what I use.
What Digital Thermometer do you use ?????
The thermometer is a ThermaPen Mark 4
What type of knife do you like to use to trim and slice?
I use a 12in cimeter for trimming and a 12-14 inch cerated meat slicing knife.
