    Nice job on a beautiful piece of meat. You are a regular DaVinci with that knife. I did a 20 lb. brisket a few weeks ago, prime cut and I trimmed it aggressively. It was a big hit at the party.

    Awesome video. A little different so very interesting,....separating after. Dang Joe, Do you really use "The Perfect Blend" on every thing in competition? That stuff is be best all around rub I have ever found...hands down!! I know the label says you use it on brisket in comp but seems to lend really well to pork too.

      Many thanks NBL yes I know of Kansas bbq store, but living in the UK the shipping is a killer. We have a couple of UK companies that sell many US pitmasters products and make obtaining such products easier. Unfortunately Joe products an't stocked at the moment, lets hope it changes soon!!

      I use apple juice. not sure if it makes a difference but thats what I use.

    What type of knife do you like to use to trim and slice?

      I use a 12in cimeter for trimming and a 12-14 inch cerated meat slicing knife.
