    CJ, I have learned so much from your videos. I am embarrassed to say that I’ve been smoking meat for a long time but I could never cook brisket or ribs that I was satisfied with I cannot tell you how much I appreciate your time.
    PS. I am still looking for a foster home.😆

    Guys, Mama and Papa Joes teaches a great class !!! i was at a very long hit or miss with my chicken..right out the gate walked second in chicken.... This video is exactly what he teaches... so if you have friends that are cooking then you need to send them to his videos... and if your even remotely local try t5o catch one of his classes.. they are the best at what they do...and that's Winning and Teaching..

    I was just saying the last thing us bbq folk need is another brisket trimming video...... I sat here and watched this whole thing.....and then watched the backyard trim one as well. ...lololol......and now I feel like I need a designated "meat" ruler

    Guys I just wanted to thank you so much for the videos on trim a brisket for comp, I have been smoking for years and perfecting my BBQ I watch alot of the pros and I honestly want you to know by far hands down your instructions is above and beyond, we have our 1st comp coming up at the end of April and I have been saying over and over , how does fir it a box no way happening.
    Well thanks to you I know and I am practicing on one tomorrow and DAMN you guys are awesome NOBODY TOUCHES FOR INSTRUCTION OUT THERE !!!!! Thanks for helping the new BBQ's

      Great question Joe! it is usually right around 8 lbs... weight affected by overall thickness!

    Great video! Learned a lot! Could you do a video on how you get/keep your slicing knife (and others I assume) so sharp? I don't think my slicing knife was as sharp as yours when mine was right out of the package. :-)

    How long do you cook the Brisket and temp? I never seen Brisket that big around here wow.

      Easiest thing you can do is to figure out where your pit wants to run and then learn to cook at that temp. At comps I'm cooking at 290-300 for 5 hrs and at home 225-250 for 8 plus hrs.

      Hey Adi, this was a comp trim, so it was a lot more aggressive. I removed about 8 lbs!

      Great question Eric. No sir, the flat would be shorter because I would cut down would expose a lot more of the point (burnt ends).
