I've watched a lot of brisket trimming videos and I've never seen anyone use a brisket slicer to trim. It's genius. Looks like you have much more control as opposed to a boning knife or a breaker. great video.

Bill, that was a great video! I've never used a caddie, how does that work for seasoning the sides when you have to "push" it into the caddie? Does that not rub it off?
