How To Make Whole Wheat Brown Bread | Whole Wheat Flour Bread Recipe | Whole Wheat Bread by Upasana

  • Learn How To Make Whole Wheat Brown Bread recipe, from our Chef Upasana Shukla in Beat Batter Bake with Upasana only on Rajshri Food. Make this Whole Wheat Flour Bread Recipe and share your experience with us in the comments section below.

    Ingredients:-
    500 gms. Whole Wheat Flour
    1½ tsp. Instant Dry Yeast
    2 tsp. Caster Sugar
    Lukewarm Water
    350ml-400ml Water
    1 tbsp. Vegetable Oil
    1 tsp. Salt
    Mixture of Milk and Vegetable Oil
    Melted Butter
    Method:-
    1. In a bowl take the wheat flour and make a well in it. To this add, instant dry yeast, caster sugar, lukewarm water and mix it well until you see small bubbles.
    2. Now add more water and form a dough. Once the dough comes together, mix vegetable oil and salt and incorporate it in the dough properly.
    3. Knead the dough on a lightly floured surface for around 10 minutes.
    4. Once the dough is ready, round it up as shown in the video and place it in a well-greased bowl. Cover the bowl with a damp towel and keep it aside for 45 minutes.
    5. After the dough doubles in size take it out on lightly floured surface and knead it for a minute and round it up again and leave it on the board for another 15-20 minutes covered with a damp towel.
    6. Then shape the dough as shown in a rectangular shape of around 7 inches long.
    7. Place the log of bread, into a well-greased bread tin of size 8 inches x 4 inches. Place the tin in a plastic bag for 30 minutes and keep aside for the dough to rise.
    8. Brush the top of the loaf with a mixture of milk and vegetable oil.
    9. Bake in a preheated oven at 200°C for around 30 minutes. Check after 25 minutes.
    10. Once the bread is out of the oven, brush melted butter on top.
    11. Let it cool down to room temperature and slice it only after 2-3 hours.

    Thanks for the tutorial. Less hydration works better for me. The amount of hydration in this recipe left my dough super sticky where I wasn't able to shape it so I just threw it in the pan... Let's see how it turns out...

    Tried this recipe today. Came out very well. One of the best recipes that I have come across. The method of rolling the bread before placing it in the tin is explained well in this video. Agree that the bread is a little dense but I think whole wheat bread will be a little dense when compared with all purpose flour bread. Thanks a ton for the recipe.

      I made it with my recipe I used 1.5 tsp of active dry yeast added to 1/4 cup of warm water left for 3 min and then mixed

      Ma'am addition of a lil baking powder and baking soda would make the bread lighter and the proofing time has to be longer compared to what is said in the video

    Dear Upasana (and Rajshri Food), thank you a ton for a whole wheat bread recipe that works beautifully in Indian conditions. I've researched dozens of recipes and online baking resources, both Indian and foreign, made dozens of loaves, but nothing gave the satisfaction and result that your recipe has. The methodology makes for a perfect loaf of whole wheat (Indian) artisan bread. Of course, I added my usual additives of vital wheat gluten, ginger powder, and milk solids, but that doesn't disturb the great methodology or the ingredient measures. I used 250 grams of flour for an approximately 400gram loaf of bread. Thank you once again!

      Sweetness is to feed the yeast in the bread... It doesn't make the bread sweet at all... U cn add honey instead 😊

      Sugar is required for yeasr to rise.
      Can try with palm sugar also.
