Yes also they add lot of preservatives and bread improvers. They have to increase the shelf life of bread so they make bread with maida to keep I soft for number of days. But we can bake atta bread at home and this should be consumed within 2 days as it has no preservatives.

My bread cooks as I write this. I live in the South pretty sunny out here today. This is my second attempt at bread making.
Yes you can add instant yeast. Storing yeast is very important. Keep it in air tight container. I keep it in fridge. So in this way yeast powder doesn't get deactivated.
