How to make the vieux carre cocktail
(TOTR elevated vieux carre cocktail recipe)
1 oz Cacao butter washed Cognac
1 oz Rye Whiskey
0.75 oz Sweet vermouth (full bodied vermouth is best)
0.25 oz Benedictine
2 dashes Angostura bitters
2 dashes Peychaud bitters
How to fat wash the cognac
Pour 25 gr of melted caco butter over 4 oz of Cognac
*Super important to use cacao butter that was NOT deodorized
Shake or stir and leave resting at room temp until the fat seperates from the cognac
Then, place in the freezer overnight
Remove the solidified fat from the cognac and fine strain
Bottle up and enjoy!

Another simple way I’ve found to tweak the original recipe to “elevate” it is by subbing the Benedictine for Chartreuse. Absolutely delicious. Give it a try sometime, it won’t disappoint!

Best cocktail ever
Thanks for the fat-washing technique. I did it to brandy and vodka.
The cacao-brandy was used in a Vieux Carre and did elevate the cocktail (for me). Just as you said, the chocolate notes come at the end of the sip. I also found it was more pronounced as the drink warmed. There was also a very subtle smell of chocolate, which again became more pronounced as the drink warmed. The enhanced taste could be due to the aroma. I will do it again.
The vodka was for a white Crème De Cacao. The “jury is still out” on this one and I need to change ratio of simple syrup. Overall the aroma is their, but the flavour is not as strong relative to the smell. This is the first time I have made my crème de cacao with cocoa butter, as typically I would use nibs.
I hope you enjoy San Sebastian! It's an amazing place, and there are all kinds of lovely little villages a short drive away. Make sure you go to Zumaia, where they have a beautiful beach below the most spectacular cliffs.

I currently have Remy Martin and Hennessy, both VSOP, and I'm wondering if this wouldn't really be the best use of those. I also have a much less expensive bottle of Paul Masson VSOP brandy. I'm no expert on brandy or cognac, but my understanding is that it's supposed to be a solid workhorse brandy. Thoughts?
Correction: the Hennessy is VS, not VSOP.
I think for this particular cocktail, vsop is best. A little more aging will add more spices, less fresh fruit and with the fat wast it will simply be better. As for you Brandy, I never tried it so I can’t tell.
