    Good morning Mrs. Mae you are absolutely right about the meat, my daddy was the cook in the house and he used Stricklean, rank (rancid) meat & salt pork (fat back) in his greens, beans & peas, to this day when I go to Vienna or Cordele Georgia (exit 101 &109 off of I75) we always stop and purchase rank meat at a store called Stevenson’s which is now the Piggly Wiggly, we always take a cooler so we can bring home meat from the country and freeze it. Thanks for sharing your amazing dishes with us.

    Collards are my favorite. Baking soda is one of thosr secrets most don't know about. I will have to try the rice vinegar. Thanks for sharing.

We cook very similarly but I am always ready to learn something new. Love your sharing your world with us here on the TH-cam. So many other cooks has taken over southern style cooking, but really missed mark completely.     Thank you so much for this recipe! My 90 year old mother-in-law has told me many times how she cooks her greens, but seeing it done is so much better. I think she uses the rancid meat because they always have that “different” delicious flavor that no one else’s has. I’m ready to try it again!

    Mrs. Mae Mae, my mother cooked with Salt Jowl Bacon Meat in her collard greens, mustard, turnips and it was delicious; and hot water cornbread. You are an excellent cook and need to go in a catering business. Stay safe.

    You are right about what the stores call "a bunch of greens" bc when I go to my granddad's house in Alabama (central) a bunch of is about at least a foot or more so wide and the bottom be held together with a sturdy fat rubber band.       Yeah some people sell bunches so small you will barely get a bowl full out of them. The bunches we have here in Alabama are usual pretty big.

    Good afternoon Ms. Mae Mae! You have made those greens the same way I was taught. Lord have mercy it was as if I could also feel my grandmother smiling down. Your channel popped up and after watching you, I subscribed to your channel. This year 2020 has been a trial indeed for all of us. Even though there has been much sickness and death in 2020, this virus has also brought some good. It has brought me to your channel so I can look at "good" food being prepared, it has brought parents closer to their children, things we thought we just had to have at the stores made us do a double take and say let me keep this money in my pocket because I do not really have to have it now.     Mrs. Mae Mae, I can’t thank you enough for your instruction on cooking the fried greens and smoked turkey wings. The over 80 year recipe is just what I needed to encourage my journey with old landmark cooking, like you say! Being a woman who did not have the opportunity of having a mother or grandmother instruction on a lot of things, makes me feel good to know, God has certainly brought these things to me.     Mrs. Mae Mae I have just become a subscriber to your channel and will make sure I watch all your videos. My grandmother taught me how to cook (she was born and raised in SC) and made her greens much like you do. She did use a little baking soda and always told me that not only does it bring out the flavor and reduce the amount of salt you need, but that it also helps to tenderize the greens. Thank you so much for taking the time to show us your style of cooking. It reminds me of my dear departed Grandmother. May God continue to bless you and hold hold you in the hollow of his hands as you bless us with your loving hands in the kitchen.
