    *today's unintended bonus* : I finally learned how to pronounce *tzatziki* !! it's one of those words I've always seen written, but never heard everyone say (I won't burden you with how I thought it was pronounced!! haha!)

    Pork is the king? How does lamb figure into the local Greek cuisine (in Greece)? I visit Europe and ALWAYS go to Greek restaurants and it seems that lamb is King.

      lamb is for weddings, Easter, and other big celebrations. Or for those who can afford it. Pork is king.

      Yes I agree with Antonis below . I also said in video when it comes to souvlaki Pork is king. We often have grilled lamb chops in the villages but never souvlaki. Thanks for watching

    All the local Greek restaurants seem to use pork loin nowadays. In years past the fattier souvlaki was so much tastier. I'll be looking for a shoulder chop. I love that you slather so much tzatziki on your pita

      Yes you can use beef , although they don’t ever in Greece. I would try either blade or sirloin and cook it medium at max . I hope this helps

    Please do not take this as a criticism.. But as an American with Croatian/Bohemian roots, I have never really been able to "get" the whole grilled meat in a pita with cold dairy sauce on it.. (Somehow, I always need gravy.. or at least au jus!)
    But.. I would so do this recipe with the skewered pork (is pork tenderloin OK?) with grilled peppers and mushrooms on a bed of rice with pita on the side.. (I've had it this way and it is delish)
    I may try this over the weekend!

      Many thanks and no criticism taken. It's just the way it is : grilled meat + tzatziki ! You could definitely make it with tenderloin, just make sure you cook it medium or it will be drier. Let me know how it works.

    I love your videos, Christine, but 'non-negotiable' Greek oregano isn't available everywhere. That being the case, I guess regular oregano will do? I hope so, because that's what I'm using. :-)

      Well being Greek I tend to stress and exaggerate ( LOL) of course I’d you don’t have Greek oregano whatever yiu can find is better than none. If you ever have a chance to find it in a store it’s worth the purchase. Thank you

    Chef Christine, thank you for being the first chef I've seen rinse their knife after using the steel.
    I grew up in Greektown in TO and was sad that the Taste of the Danforth was cancelled this summer. But you've now taught us how to make all the components for a delicious souvlaki! 😋

      That’s a good question. It would be great to add to some leaner ground pork to make sausages or pate ( old
      School I know ) but also Chinese dumplings or just render it and use to season a cast iron pan. I hope this helps.

    I guess that since Greece has many neighbors who are Moslem and don't eat pork, the Greek version of pork souflaki is on its own, but it's tastier than the chicken version. Thank you Christina.

    In my experience Greek. Is always lamb none of my Greek friends have given me pork in this dish maybe an Australian Greek thing but any way l will ask them what is going on 🌹

      In Greece souvlaki is generally pork , in some cases chicken. In the Peloponnese it is pork for sure. I have never seen lamb souvlaki in Greece. I guess different parts of the diaspora have adopted recipes from their local country. I hope this helps. Thank you

      I'm british, live in usa. Been to Greece loads of times. Was NEVER EVER served lamb. Only pork. Since I moved to usa, can ONLY get lamb. I always thought lamb was a Turkish thing. Doner kebabs. But the pork souvlaki wins every time for me. But yeah, usa didn't get the pork message either it seems 😕

    Been on my way to Greece for two months - but no movement due to Covid. This recipe made me suffer - thinking about going to the παραλία in Agia Triada near Thessaloniki and have a Souvlaki ... and maybe an ouzo or two afterwards in one of the bars.     Hi Christine - Since last week I have been searching for Greek oregano and since you said it was "non-negotiable" yesterday I found it at a Greek grocery store and last night I finally made it but left out the fries and all I can say it's AMAZING!!! I could taste all the ingredients, the meat was tender and full of flavour and it had a freshness to it (I am guessing from the lemon rind & juice) and it was finger-lickin' good!!! Thank you for another great recipe, I will definitely make this again and again :)

    Christine, I just want to say, that this souvlaki is awesome!! I've been to the paralia a number of times since this was posted ;) Ive even introduced it to my parents and they have made it a number times as well. Only change I made was to use chicken thighs in place of the pork. Question, Ive always been under the impression that pork shoulder is fairly tough, and needs a low and slow cook to tenderize. Does cutting it in small chunks like this allow it to be tender?

      I LOVE it ! Glad you all have been to the Paralia several times. Pork shoulder , when cut from the part closer to the neck ( often called butt) can also be grilled ( as per video) . The rest of shoulder is quite a big cut and mostly suitable for slow braising / cooking to soften the tougher / sinew etc. I hope this helps. You have to try it with pork ( butt ) !

      Yes, you can definitely marinate the meat overnight ( I purposely leave out the lemon juice so it's cool ) . The flavour will be that much better. I hope you try and love it.

      @@ChristineCushing Thanks, I did and it was delicious! I was concerned that the meat won't be tender, I know the same cut from beef or lamb needs to be braised but the pork turned out perfect. Due to the weather outside I had to replace bbq grill with cast iron frying pan and it worked just fine. Love your channel!

      It would be the only way to really tell the difference. The tenderloin is super lean so there is very little room for error and it would have to be cooked medium / medium well at most. The shoulder also has more flavour. Thanks for watching

    love your version, I always add lemon juice to the marinade but I am going to do it your way from now on. It makes so much sense. I admit that I take a shortcut and skip skewering my meat and just do it directly on the grill. I know it isn't right but I don't notice a flavour difference and it's a bit of a time save. There is nothing like a souvlaki sandwich at a taverna terrace in Greece late at night while the stray cats come and try to beg you for your food.

      Yes you can definitely make this on a grill pan on the stove top, so the meat cooks at a high heat , similar to the grill. You could also put it on a pan and bake at 400 D oven . Opa ! I think you will love it. Let' s see how it compares to the Danforth experience.

Haven't been to Greece, but this souvlaki reminds me more of a kebab (much better in my humble opinion),than the type that is on a spit type device, which is way over cooked for my taste. Looks great, however I'm sorry you can't make the beach in Greece for now. Really enjoy the way you cook,Thank you!

    Can you use tenderloin ?..

      Yes, you can use pork tenderloin. In that case, make sure to cook it just to medium or it will be dry. Also be careful of what's called " seasoned" tenderloin, which is brined. You'll want to reduce the salt. I hope this helps.

    Love your recipe. I have greek oregano but getting low. Greek oregano has a flavour unlike others. Where can I find it Niagara area?

    Kalamaki (καλαμάκι) means straw, the thing you use to drink frappe, souvlaki (σουβλάκι) means small skewer. Bu people in Athens, erroneously, call it kalamaki. Nobody in Pelloponisos, Macedonia, or the islands calls it kalamaki.

      Yes it’s true but kalami also means cane , like bamboo and so Kalamaki is also a skewer is what I learned. But thank you for punting out that they use that mostly in Athens .
