I LOVE JAMIE OLIVER! He is the cleverest and most economical cook, ever! He baked that chicken and ate most of it.Then,he cooked the bony bits in soup and used the remaining flesh for Crustinis and Mushroom puree.Sheer GENIUS!

Jamie has certainly great cooking skills (in fact, I think he's better than many Italian chefs too) and he just comes across as such a nice guy!

Tip for you guys: when making a stock roast the bones on a tray in oven and get a bit of blackness going. Then boil with aromatics to get a really nice , deep , rich stock. Learnt to do it that way in japan

When I make chicken soup, I add a whole mild chilli to the homemade stock and a sliver of root ginger. Taking them out when the chicken bones come out. Then I blend the carrots and celery and onion, Then I chop more veg and cook it in the stock with chicken meat. If I want to thicken it, I will put about a tablespoon of rice in when the fresh veg goes in when I season.
I have just been out of the hospital for 2 weeks. (Just got kidney transplant!) This is the first thing I’ve seen that makes me hungry again , that I really really to want to eat. Looks like comfort to me.

This was really, really good! For me, the broth came out a little short in qty and the bread could have used a wipe of olive oil. Not complaining or picking faults, just sharing to possibly help others.
