The Best Chicken Soup - Cooking Kosher

  • Welcome back to Cooking Kosher! Today, I'll be making the best chicken soup (in my experience) using the best, freshest ingredients you can find.
    There are some recipes that will never get old, and this simple recipe for old-fashioned Chicken Soup is definitely one of them! Skip the store-bought soup and make it from scratch for this Shabbos - you'll be so glad you did, and so will everyone else at your Shabbos table - I guarantee it!

    Awesome. Mum done this almost same recipe, but used to cook the washed chicken whole, after a couple hours simmer would remove the chicken skin, plus, at serving we always added a squeeze of lemon in the bowl, very healthy power soup I'm from London with Turkish-Cypriot parents with various ancestry DNA from Turkish-Russian-Middle eastern background including 10% Ashkenazi Jewish. The soup really is that awesome, all should try and good health.

    I also want to humbly suggest you, that I first put chicken in a pot, then I add the onions, garlic, parsnip, green bell pepper, leeks, (all these are the veggies you don't want in your bowl later on, when you eat the soup), but they cook alongside the chicken for the flavor, and also I add salt, pepper. Chicken with the bone in, cooks approximately for an 1 & 1/2. When the chicken is cooked, I get another pot with a big sifter in it. I pour the content of the soup through the large strainer into another pot. Then I do it again, after I rinse the original pot where the chicken was cooked with the water, and again, I use this time a fine strainer, (that catches all impurities, that still might be in the soup, so your broth will be completely clear. When the clear broth is in the pot, I bring it to a boil again, and add all the veggies I wanna see in my bowl, (such as; carrots, celery, parsley, dill) and I cook it til it's nice and soft, about 20 minutes. Then I pick the chicken meat from the bones, and add them into a soup, and cook another 5-10 minutes. In the mean time, In another pot while the veggies are cooking, I cook noodles, or pasta of my choice, or matzah balls, in a well salted water. Then drain them, put a bit of an olive oil or butter over them, mix the pasta, and serve it with the soup! Bone appetite! Shalom!

      That is just the way my grandmother used to make it although she would reserve the fat that floated to surface for use in making Matzo

      this how I make mine too. put lots of vegetables that discard after the soup is ready. parsley is add for the last ten minutes. I too like it completely clear. no store bought stock or store bought broth is added. what gives it the flavor are the roots. parsley root and celery root. i am not a good cook, but my chicken soup is really the best with no store bought anything.

      @@dankanewyork1800 parsley root and celery root tomato, onion potato. The roots give it the extra flavor mostly the celery root. I also add a punch of ginger powder gives it the extra kick.

    Looks delicious!
    Just a tip- Instead of going fishing for bones you can put them into a Sack n-Boil bag, and then once you are ready to take out the bones all you have to do is take it out and you're done. Nothing is left behind accidentally, and no extra veggies come out in the process.

    Best is right, but why? must be the fresh dill? This recipe uses the same ingredients as other chicken soups I have made but none had the wow taste factor of your chicken soup. It really is the best ever. Bless you for sharing

    I found the inner leafs and stocks of celery the sweetest and less bitter. The outer ring of celery tends to carry over a tart or bitter taste. I never used fresh dill before, thanks for that idea.

      When I make my chicken soup I never sauté the veggies I put them all in the pot w the chickens & the broth & after I clean off the top & it cooks, then I add all my herbs. My soup always comes out delicious. I always get complements. I also cook mine for several hours. Everyone has there own way of cooking.

    So I just made this. Local meat mkt(I'm very very rural) had drumsticks $0.97/lb) so this was a great budget meal(s). House smells wonderful. I added more water and noodles. Big shout out to thank you.

    I would actually strain it really good to make sure no little pieces of bone 🍖 sit at bottom of pot. It’s happened to me years ago. Scary!

    In my city we have a Jewish deli and I had the chicken soup with big fluffy matzah balls oh my gosh the matzah balls were so fluffy and good i wanted to take the whole pot home lol. Also yea the dill was key to it to it pulled everything together and it seeped into the matzah balls

      I am a Turkish Aussie watching from Sydney so i will most likely never have that mutzah balls soup . I wish i could though - they sound yummy . My mum makes a Turkish soup with meatballs - I wonder if it’s similar . I like that he said a prayer when he tasted the soup . Does anyone know what he said?

    He didn’t wash his hands after handling chicken and totally contaminated his bowl of salt and pepper mill. I use double the chicken and no broth - just water. Also, the foam at the top is not fat - it’s a collection of impurities that any chef will tell you to skim.

    We always make chicken soup using a whole chicken, onion, celery leaves, middle of the celery, thats small, tender, cut up celery stalk, carrots, season let it cook for a couple hours then strain, take chicken out, strain again, cook noodles, kluski noodles, chicken cools cut up and add to broth and noodles. We use all chicken broth, no water.

    in my family and community we make soup to save money and make a little protein [chicken] go a long way. I do not buy broth, it istoo expensive, I use stock cubes. What you should do is throw in one stock container and then refill the container with water to rinse all sout and not waste any. Need to rinxe out before throwing container intto the recycling bin.

    Looks like a good brew... I'd like to suggest that you try straining that at the end and putting in fresh carrots and celery. Those vegetables are as boiled out as the bones at the end. I just simmer 20 minutes and then put the chicken back in.

      @@CookingKosher I don't know exactly, but I think a soup chicken is an older chicken, she said soup chickens had more flavour. But I suppose a roasting chicken would do.

      Be careful about those chicken bones! They could get lodged in your child's throat...or even yours! I'm not jewish, but i pull the chicken out after it's well done & take the meat off bones & add the meat back in, at least what i need & save the left over meat for a casserole or whatever. Chicken broth is like liquid gold...it makes anything taste better. The store bought, not so much...it has very little taste, IMHO!
