    I had made this flan recipe about a year ago, and thought that I had saved it. I wanted to share it with my grandson ( who at 14, loves to cook). I was in dismay, but was overjoyed when I finally found it.
    This takes a bit more effort, and I did have to remake the caramel, but I’ll never find flan anywhere better than this 🤩‼️

      Me too! It's so yummy and creamy! I also like (homemade) dulce de leche ice cream, and could eat the whole thing myself in one sitting!! 😂😂😂

    I made this yesterday to take to our friends' house for dinner last night. The caramel worked the second time (although I may have given up too soon the first time). Per Christine's post (which I wish I had read before I tried to make it) - she is spot on - keep stirring the the sugar. It will look weird and get lumpy but don't give up. Keep it on low heat, keep stirring and the lumps will melt. Once they are all melted, it's ready to go into the glass baking dish. Don't panic if some of it starts to harden into "candy" when you pour it in. It will soften when it bakes. It looked beautiful, our friends were blown away (and he is from El Paso so he known flan), I was proud, and it was delicious! Thank you so much for the great instructions!

    A tip for the next time you make flan... try to warm your flan dish. Either u can run hot water in it, (then dry it of course) or my personal favorite is to put it in the oven for a few min just before the caramel is ready. It gets instantly hard because yes you're right it's like a candy. Sugar is a very versatile ingredient and changes with different temperatures. It can be finicky. Your flan dish was much colder than the sugar so it solidify before allowing u to cover the bottom. It wasnt wrong. Try to warm your dish, it will allow you time to swirl or spread (whichever is your preferred method) the sugar to coat the bottom. I have never used heavy cream but am curious about how creamy it becomes without all the air bubbles. Also before watching I was assuming that you would add cream cheese. Alot of people like to add it to achieve the creamy desired texture. I appreciate that you didnt. 😊 thank you for sharing and hopefully you will be able to test out my tip.

    I’ve made this many times. I stir the sugar. It does harden when you pour it into the baking dish. I pour the custard onto the hardened sugar. It softens during baking and turns out just fine.

      Yes, me too. I actually try to get my sugar as close to the burning point as possible, but without actually burning it - it gives it a great flavor!

    great recipe , i used 2 / 3 cup of sugar and 1 /3 cup of water for the caramel just swirlled itand that mixture worked better for me.its was super yummy ty so much. im making it again today !!!

    The way I was taught was to make it in an aluminum pan. You put the sugar directly into the baking pan, and melt it over the fire. Works every time. BUT if you really want to use a glass baking dish, you could put it inside the bath pan with the boiling water to warm the pan up before you pour the melted sugar into it. The problem you're having is because the pan you're pouring it into is cold. I still choose to opt for the aluminum baking pan. It's very easy and there's only one step, and one pan to clean. Happy baking!

    I really appreciate you r willingness to show a mistake so that we may not make the same. SO may cooking channels are so heavily edited that you never see anything even remotely like reality where sometimes it just blows up on you.

      Yes! The realness is one of the things I love about her channel. It's not heavily edited nor perfectly scripted to the point where it becomes more about the aesthetic and cinematography than the actual food. Just very down-to-earth, relaxing videos and delicious recipes.

    After reading the comments below and watching a different flan making video, where the cook used the wet method to make the caramel, I gave it a try. As suggested in the comments, I briefly put my flan pan in the preheated oven for just a bit so it wasn't cold when I poured in the caramel. And I added 3 TBS of water to the 2/3 C of sugar for the caramel. With these two adjustments I made my first flan and it was perfect!!!! The bit of orange extract was a great but subtle addition and I will always use it.

    Have you tried using egg yolks than whole eggs? We make flans in my country too (Philippines) but the best flans I've had uses just yolks and a 1:1 ratio of evaporated milk and condensed milk. I just though you'd like to know one of our little secrets haha. It makes the flan more rich and creamy.

    Flan is so delicious , the trick with the caramel is you use a cup of sugar at a low to medium heat and when it's almost all melted you shut it off but keep stirring it or moving it so the heat melts what's left. Also try adding a can of coconut milk instead of the cream or evaporated milk. Another way also is you can add a whole bar of cream cheese. It's comes out awesome. Thank you for your recipes

    I have a trick for you. The same thing happened to me when I made my first flan. So the next time I heated water just to boiling. Then poured inside of dish I’m cooking the flan in. I prepared my flan. Pour out water from dish wipe dry then add caramel sauce. Then swirl the caramel around. It works every time. Good luck 😉

    Beautiful!! but add more caramel sauce on the top and let it drip all over...the best part! I used to make this dessert as a kid for my family from an old Mexican cooking book. I like the strainer tip. (And I appreciate your intelligent wording.)

    When I make my flan, I use almost your recipe but i add a block of cream cheese. The cream cheese makes it really silky smooth. I love how yours looks. I don’t make flan to often because I want to just sit there and eat it all up 😂😂

    We grew up making this! My grandma recipe we use 2 cans of evaporated milk, we use brown sugar instead for the caramel, and we make make 2 kinds, if u add a little coffee to it we have a coffee flavored flan 😋😋I usually make both one regular and one coffee flan my family loves both 😂

      My first homemade flan, made by a coworker from Latin America, was made with espresso - it was soooo good! Do you carmalize your brown sugar? I've always wanted to try that, I wasn't sure if it would work/carmalize properly. Flan is the best! 😍

    I had flan for the first time a few weeks ago. I have been wanting to try it for more than 5 years. I expected it to have the consistency of say, cheese cake. It was more... not sure what the word would be. Like pudding but more stiff. It was a lot more mushy (not in a gross way) but I wasn't expecting in my that. And who ever made it added way to much lemon juice. And it felt like my teeth were decaying afterwards. But it was good. I could tell it could of been better. But this was a class. Practice makes perfected.
    Edit: Creamy! You said it at the end. That's what it was!

    I love flan! I had the same issue with the sugar all the time so I started using Cajete which is a mexican Carmel. It taste just as good and saves the headache of burning the sugar and it sticking to the pan. if you want to try that 🍮

      Cajeta and caramel are not the same flavor. Don't give up on making the caramel from scratch you'll be sooo happy when you get it right. 😘

    I would recommend adding half a block of cream cheese while blending it will make it extremely smooth and creamy. I use cajeta insted of melted sugar it is easy if you are a beginner cook. K love you so much♥️😋

    I know the pain of making caramel sauce and the trick is to prepare it in the same baking dish that your will be making the flan that way is a lot easier. Hugs from Canada.

    Put a squeeze of lemon or lime juice in your sugar when you're making your caramel and it will help prevent it from getting hard.

    I heat my baking dish in a larger pan of hot water well before I pour the caramel into it. I use the same pan that I use for the water bath. It helps keep it runny so you can swirl it around the baking dish. Cool and pour your custard in and proceed per your recipe. Mine just went into the oven. My wife is from Venezuela and asked me to make this tonight and I have to please her.HaHa!

    Thank you for sharing your honesty about the caramel! I tried making flan a few days ago using another video recipe I had seen and the same exact thing happened to me haha. I even used the exact same oval pan that you have! I tried a second time with a little water and the sugar stayed white and never turned into a brown caramel. It intimidated so I didn’t want to try anymore but watching you go through the same thing and try again and succeed the second time around encouraged me so I’m going to try again right now! It’s also hard to get the hard caramel off the pots once you try to wash it 😂

      If you boil some water in your pot of hard sugar it will come right out.

      I just put my pot and spoon in the sink, run hot tap water in it and let it soak - I may have to change the water out a few times, but I let the hot water and time do the work! 🤗

    I usually just buy the box stuff at Walmart! And then I add a tablespoon of sugar and my own vanilla and two egg yolks. Follow the directions on the box.😊
    But I’m going to attempt this!

    I always do the sugar without water. For me it lumps up so bad with water and turns out perfectly without it. I've never tried the orange extract but I think I will next time. That sounds delicious

    I have only made flan one time and I freaked out when the sugar hardened but I certainly wasn't going to start all over again and yet when I served it the sugar had turned into luscious caramel so it doesn't matter if it gets hard so long as the dish is relatively well coated and even then I think it liquefies again and will spread itself out naturally

    Thanks for sharing! I love making and eating flan and my recipe is very similar to yours. I use a touch of almond extract. Your orange extract sounds super yummy, I'll have to try it! My hubbie doesn't like it when I make changes (like the time I made a pumpkin flan), so I may have to make two! 😂 It's also very good with a few tablespoons of pecan liqueur in it!!! 😋
