Just made these and they turn out to be fabulous I added some almonds when grounding the oat and after the cookies cooked I dipped half on vegan unsweetened chocolate yummyyyyyy
@healthy vegan kitchen, sorry I amended your recipe a little bit since I didn't have enough oat so i substituted approx third of the oat amount by almonds to make mixed oat and almond flour, and as I said it was delicious... thank you once again for your simple clean recipes ❤
We're about to make these again. Although since we live in the mountains the high elevation forced me to modify the recipe, ended up using more oat flour & no milk. Otherwise, the dough wouldn't have had the right consistency. They were really good on their own. But also topped with a thin layer of vegan caramel, then once frozen, a thin layer of dark chocolate and back to the freezer, until firm. They were incredible!! Thank you for your amazing vegan recipes.
Yes, any sweetener of choice but you night need to add a bit more liquid in that case. It should work without apple cider vinegar as well, then you might want to leave out baking soda too

Based on the ingredient measurements in the description assuming it makes the 20 cookies on the pan in the video, it works out to about 48kcal a cookie which is pretty great!
Did anyone else felt 50gm nut butter was too much..seemed double the amount added in the video...my dough was so moist even without adding any milk to it 😑 or was it 50ml? 😅 just put them in the oven..hopefully turns out ok Didn't turn out well..baked for 25 minutes still soft and chewy. So sad..I followed the instructions to the T 😭
Maybe it is a good idea to leave the butter to the very end? Start kneading the dough and add the butter bit by bit till you reach the right/desired consistency.
I just baked them they are very good and crunchy I have been looking for an oatmeal cookie that is not chewy finally fond it thanks for the recipe.

What almonds? There are no almonds in this recipe

Maple syrup is also sugar, in case some of you are in a sugar low diet...
I substitute Honey for Maple syrup and used real butter instead of almond butter. I had to add a bit more of the oatmeal to balance it out. But Tasty!
Honey releases toxic substances when heated.
It's better to use sugar rather than to heat honey. Or use jaggery if you get it around somewhere.

I used coconut oil and the dough was too runny, so I add extra oat flour and they came out tasteless.
