    Ingredients
    * 2 1/2 cups (231 g) rolled oats (or quick oats)
    * 1/2 cup + 2 tbsp (100 g) water
    * 2 1/2 tbsp (52 g) maple syrup
    * 2 1/2 tablespoons (33 g) extra virgin olive oil
    * 2 teaspoons vanilla
    * 1/4 teaspoon salt
    Instructions
    * Preheat the oven to 350°F (180°C).
    * Place the rolled oat in a blender or food processor and blend until you get a coarse! flour.
    * Mix the oatmeal, vanilla, and salt in a bowl, and add the extra virgin olive oil.
    * Bring the water with maple syrup to the boil and pour it into the bowl. Mix with a spoon and let it cool slightly.
    * Then use your hands to form a dough. Feel free to add a bit more water if the dough feels too crumbly. Just add it a tablespoon at the time.
    * Roll out the dough until very thin (3mm) and cut in circles with a round cookie cutter. If the dough is a bit sticky, I normally roll it out on a baking sheet, to avoid using additional flour.If the dough is too crumbly, don't add too much water. Simply roll out a quarter of the dough at a time.
    * Place the circles on a flat tray covered with a baking sheet, no extra grease required.
    * Bake until golden brown, for 15-20 minutes. If your oven doesn't cook evenly, make sure to turn the trays half-way through baking. Keep a close eye on the oatcakes in the last 5-8 minutes, to avoid overcooking them.
    * When the oatcakes are ready, remove from the oven and allow to cool on a wire rack.
    * Keep in the jar.

    I added 4 tbsp peanut butter and reduced the oil to 1 1/2 tbsp. It turned out as CRUNCHY as butter cookies! Thanks again for this breakthrough recipe!

      @@LGAussie I've made 3 times so far, kept improvising and am really really happy about the results! My recent recipe to share with you: (Exactly what I did)
      2 ½ cups ground oats (or: 1 cup oats + 1 ½ cup flour) + 2 tbsp toasted sesame seeds processed in Vitamix with oats + ⅓ cup or more water or milk + 1 ½ tbsp syrup or Agave + 2 tbsp sugar + ½ tsp salt + 6 tbsp peanut butter + 1 ½ tbsp oil to make a shapeable dough, but a bit on the dry side.
      If you like, you could add 1/4 cup crushed walnuts or 1/4 cup crushed dark chocolates. I did once.
      Bake at 325 F ASA the oven is turned on for 17 minutes
      *Sesame seeds have to be ground with oats to release the wonderful fragrance.

      @@LGAussie You're welcome. I did mean toasted (black) sesame seeds. But their flavor and fragrance can't be fully released unless you crush or grind them.

    I didn't have maple syrup so used molasses instead; and instead of rolling it out, I just scooped out some dough and flattened with my hands. They turned out great. Thank you for the recipe.

    Love these.
    You can use melted butter in place of olive oil. I add lemon thyme and sprinkle with salt flakes when I take them out of the oven.
    You can mix it up. Sooo good.

      @@LGAussie I baked mine for 30 minutes then left them in oven to dry out. I added sugar sprinkled on the tops as well. I like these! I think next time I won’t add sugar to tops. I think this would be nice with a slab of cheese!

    Tipp: to cut out the cookies you can use also a small tea or coffee mug it will add some fringes and make them look artisal like the expensive ones.

    Единственно добавила 1столовую ложку сахара и вместо кленового сиропа положила патоку мальтозную ржаную. Очень, очень вкусные получились. Жаль что делала одну порцию, теперь снова надо печь....
    В следующий раз буду сразу 2 порции делать или даже 3

      I cured my fatty liver by losing twenty pounds. It helped my cholesterol and back as well. Replacing junk with high fiber treats like this is part of how I did it.

    I will make these but I will use a flavorless oil such as canola or grapeseed oil. I love a crunchy oatmeal cookie. Dunking in coffee is so so good

      Use light olive oil or butter.
      Much healthier than seed oils.

    Tengp avena en harina y mezclo una parte con la crujiente. Me encanta, Le agrego bagazo de coco, 2 cucharadas de aceite de oliva, sal apenas, y 2 huevos, mezclo, No las corto las amaso con la mano y le doy forma.

    Blender crushed oats are a great substitute for some or all of the wheat flour in many cookies. I've even made shortbread with it. Very Scottish.

    keep in mind the finer the oats are physically processed the faster the blood sugar will spike. maybe try a course mix 50% and regular oats 50% to reduce the processing. but it actually looks like it could work good job.

      @@jm.3012 La verdad yo hago unas galletas de avena y sólo le pongo agua caliente muy de a poco, revuelvo con cuchara de madera, luego amaso con las manos (ojo con el agua, si pusiste agua de más tendrás que agregar más avena...), estiro la masa con un palote, uso maicena para que no se pegue, corto con cuchillo en cuadraditos, pincho cada galleta con un tenedor, y las cocino en sartén a fuego bajo, tapadas, las doy vuelta, y hago ese procedimiento hasta que note que están crocantes. Salen de maravilla.

    Someone gave me several pounds of steel cut oats. They are as hard as tiny stones but they have wonderful flavor. Can I bake with them? If not, it's going to take me years to eat all of it as cooked cereal. Thank you.

    I just made these right now. I added 2 tsp of cinnamon, 1 tsp of clove powder, 1 tbsp of sugar instead of syrup, and ½ cup of raisins. I blended the raisins with the water to make them finer. They taste so yummy! But was it really 2 spoons of oil? The video looks like 1/4 cup at least

      4 Tablespoons is 1/4 cup, so yes that 2-1/2 T. sure could look like a lot. Am going to try adding the things you did except I'll use crasins

    I know they're healthy but needs more sweet and flavor I even added cinnamon and I had to add more maple syrup to the dough

    I'm impressed. I look for easy, quick and healthy (because I am lazy !) I wanted a recipe that could be a base for extra ingredients to vary the result each time - eg; raisins or nuts, choc chips, cinnoman, banana etc. Is this possible ?

    375도 10분굽고 뒤집고 다시10분 구워봐야겟다
    메이플시럽이없어서 50g설탕에 뜨거운물2g 전자렌지 2분 돌리고 녹여썼다. 설탕70으로하고 얇게밀고난뒤 구워볼예정이다. 더 바삭하고 달게먹고싶어서이다.

      Sure, but I will shape the dough into a log, chill in waxed paper, then cut into slices.

    Will give this tasty recipe a try! Few questions: Will cookies hold well without added baking soda / powder? When substituting maple syrup with honey, is it really necessary to boil the water with honey or just heat the mixture slightly until the honey melts? And I would also substitute olive oil with extra virgin coconut oil.
