Keep it very traditional and replace the heavy cream with pasta water....reduced calories improved flavor....the heavy cream is the American version of Alfredo. Using the pasta water is old traditional authentic Italian Alfredo.And don't forget the nutmeg !

Moderation. I knew these Russian neighbors who were old when we moved into our house in NJ. They sat in the sun all day, w/ no sun screen. They had veggie gardens, cherry trees, etc. No diet followed that I saw. The man, he drank red wine out of the big jug all day. Lunch time his wife cut rye bread, about 1 1/2” thick, then spread butter, about almost 2” thick. Then she stuck garlic cloves peeled of skin. Into the butter. There was a good amount of this stuck into the butter. Like candles they stuck out like a 1/4”. They ate this daily. They ate high fat foods like smoked hams, etc. they both lived into late 90’s. So go figure

u know not all countries follow " diets". in Morocco there is no such concept as a "diet" ( for the older generations at least). they just eat whatever they want whenever they want. and our foods all come with bread. we use lots of olive oil and butter. and we do love meat a lot. yet everyone lived happily to their late 90's and even more. of course ppl get some health probs after 60's ( usually diabetes and hypertension) but i guess that's normal. point is, diets are indeed important, but they dnt mean they ll make you live longer. it really is a mix of VARIOUS factors that we have zero knowledge of.

for those going all out to say this is unhealthy - its a sauce its not the whole meal - divide the sauce by the number of people and you will find its probably only 1/8 cup ( 30-50g ) or less per person - the bigger problem is the amount of carbohydrates that the pasta may contribute :) it would be unhealthy if you ate ALL the sauce and only the sauce :)
I make this exact same thing since my kids ate solid food! They’re 16 years old now & it’s one of their favorite meals I cook. I just got a stand mixer so my next plan to level up this meal is homemade pasta! Enjoy! Looks delicious! 💖

That's my magic power. I can eat anything from 10am to 3:30pm. Anything. And I don't gain weight. If I want to lose a few pounds I eat mainly keto style for 2 weeks and.... The weight falls off. I'm 59 and don't move as quickly as I used to but I still stetch and lift a 5lb weight doing 75-100 reps 4x a week. Plus I work my legs. Praise God we can even still eat so well.
