      Most of the Asian noodle dishes I know (and I swapped noodles with linguine/spaghetti pasta) can be done under 15 minutes, 35 minutes in total, preparation, eating, and cleanup. So don't go overboard with decision fatigue ;) Also try Spaghetti Aglio e Olio (+ expanded with more vegetables, like broccoli or mushrooms).

    Pro tip, you can just pan fry gnocci they become crispy on the outside and stay chewy on the inside. Its one of my favorite textures to eat.

      Baking them on a sheet pan also does this! It's one of my gf and my favorite meals, just pop some sausage, some peppers, some sundried tomato, and gnocchi onto a sheet pan and bake. Super easy and delicious

      @@chawndel8279 I usually do about 10 mins, shuffle it around a bit, and do another 10. At 375-400. I toss up with a pinch of salt, olive oil, and red pepper flakes beforehand, and add some grated parm in the last 2 minutes

    As a parent with young eaters, weekday pasta recipients are an absolute go to. As you mentioned, it’s also a great way to get some different veggies into their diet. (Only downside in the lack of spcy😢)

    What i love about Ethan's channel is that he zooms out of the actual recipes and provides more generalized methods of cooking. He doesn't just say "hey buy this ingredient list and lets make this!" like other channels. He shows you ways to make FOOD with what ingredients you may have laying around. He prioritizes function and utility rather than big fancy recipes. Perfect for us busy folk who can't afford to buy groceries every other night.

    One thing I've done lately is swap most of my pasta dishes over to chickpea / lentil pastas for a slightly healthier kick.
    Would love a video looking at the differences in taste and uses for some of the new pastas that have come out over the last few years!

      @@McRootbeer Agreed ... I eat very low carb, so wheat pasta is a major treat for me. I've tried bean-based pastas, but they all turn to mush with even a minute of extra cooking ... and leftovers are a complete disaster.

      My favorite pasta is Barilla Plus- it has extra protein and fiber and it has a good texture that does great with leftovers.

      Costoc has cauliflower gnocchi that's pretty good, I pan fry from frozen so takes maybe as much time as boiling water and cooking normal gnocchi.

    Great suggestions- as always will be incorporating this into my routine! As a side note my partner's Italian mama has solved evening decision fatigue over dinner by always deciding what's for dinner at breakfast. She asks everyone, puts the ingredients on the counter (including whatever needs defrosting) so when she comes to make it hours later it's just a task, not a "what are we having?", "Do we have the ingredients", "Who's coming for dinner" parade. I have started doing this too, and it's so simple, but so effective!

    Lemon caper pasta is a godsend for a quick week meal (I cook it for lunch when I work from home because it’s so fast). Start boiling water for pasta, and noodle works but I prefer long flat shaped, once the pasta is cooking grab a metal bowl and add chili flakes, olive oil, zest of a lemon, lemon juice, and sardines (I like using the smoked fillets). Once pasta is done cooking add it to the metal bowl and mix until sauce is emulsified, add as much water as needed. Then add capers and garnish with lemon zest. All ingredients are pantry stables and it’s done in 10-15 minutes.

      Sounds good... and olive-oil-packed tuna, or canned or smoked salmon, might be a good swap for those who don't like sardines.

      I do this with tuna in olive oil all the time, frying the capers first and garnishing with fried shallots seems to really kick it off

    Big tip coming from an Italian. Let your water boil first, then add your nice pinch of salt! This decreases the boiling time of your water. Putting pasta into vigorously boiling water is rule 1 in the Italian kitchen as it preserves the texture of the pasta! Nice recipes, keep up the awesome work!!

    One of our favourite family pastas is simple and similar to what you've got going on here. Slap some diced onion and aromatics in a pan, throw in 200g of cream cheese (low fat works), a stock cube, 1 litre of boiling water and 500g of pasta. Slow cook until the sauce is thickened and a little runnier than you'd like, pull from heat, lid on for 3 minutes, after those 3 minutes pass add a handful of grated cheese of choice, and a jar (or half if you prefer) of red pesto, ideally the one with chilli in it. Not the healthiest, but serves a family of 5 nicely and everyone enjoys it.

    A quick pasta recipe my family made often was a simple salmon cream pasta.
    The ingredients for roughly 4 portions are:
    *as much pasta as you want* (these days i try to include more vegetables than pasta)
    *~200g salmon* (other fish work as well, but for this i like salmon the most, even if it's not really sustainable)
    *at least 250g of heavy cream* (less cream makes a stronger tasting sauce; adjust as you like)
    *~2 Tablespoons of tomato paste/concentrate
    and optionally garlic, which i really like
    Simple seasoning works best for my taste, but chili or herbs add a nice touch to the dish. If you want more textures you can top with roasted nuts.
    Just lay the salmon into a (high walled) pan and fry a little bit at medium-high heat. When the outside of the fish is cooked but the inside is still raw, add the tomato concentrate and fry for 1-2 Minutes.
    During this time Ii ike to break apart the fish into large pieces and coat them in the other ingredients.
    If you want to include spices or garlic, you can add them with the tomato concentrate.
    Pour in the heavy cream and cook until the sauce thickens. (Use a lid to avoid splatter!)
    After mixing the salmon should be in medium-small pieces.
    All those steps should take about 10 Minutes, depending on the ingredient amounts.

      I think the tomato concentrate is called tomato paste in English. At least it’s the real thick one, otherwise, you were correct in calling it purée.
      ETA: now that I read all the way to the end (the rude commenter before me distracted me, sorry), I’m pretty sure it’s tomato paste, cause you usually want to add the herbs and spices with the tomato paste, or just after, cause you want to fry the paste to cook out the taste from the tin, and you also want to fry spices to bring out their flavor.

    You don't even have to boil the gnocchi. Saute it in the oil and you'll get a crispy outside and fluffy inside. I do a sheet pan dinner with them for an easy meal.

    Great tips as always. I do a very similar "healthy" white cheddar mac n cheese as well, and it's basically the exact same recipe, but instead of sour cream I use cottage cheese blended until smooth for higher protein content and cheesier taste

      @@brenna0323 I typically use the packets that come in boxes of white cheddar mac n cheese - I use brands like Goodles or Banza, but it can be any brand you want. I just like using that pasta bc it has high protein as well

    I make a very similar pasta to your first dish, which is also quick and healthy. I use high protein pasta, fennel pork sausages (kind of low fat) and zucchini. Highly recommend!

    For #3, I would put the pepper flake in before blending it in order to even the distribution, but otherwise everything here sounds awesome.

    Toasting the gnocchi instead of boiling makes this dish even better. Butter in the pan, toast the gnocchi and then add the rest of the ingredients. Superb.

    i like these videos a lot! but i don't think "white cheddar powder" is ... a normal pantry ingredient? I'm surprised there is no link or listing or explanation about sourcing such an unusual ingredient.

    Have you ever tried Barilla's protein pasta? We've been using that version of spaghetti, macaroni elbows, and penne, and it's been great! We don't really notice a strong taste difference, and it helps us get a little more protein into our pasta dishes.

      Sounds interesting, but from what I looked into, the protein is not full protein (in other words, doesn't contain all the essential amino acids). It's still not bad to get non-full protein, just don't bother relying on it to replace animal protein.

    Vincenzo of Vincenzo's Plate would have a heart attack at the second recipe! Nice use of ingredients in these recipes.Reminded me to look for gnocchi at the grocery. I think one could make a pretty mean lasagna, with sausage as the meat. Thanks for the sauce!!

    I love the idea of using the starchy pasta water instead of a roux for the mac and cheese sauce. I'm always looking for ways to cut unnecessary calories out of dishes while maintaining that decadent flavor and a satisfying volume

    What I've learned from making a shit load of different pastas over the years is that the best pasta dishes are honestly the ones that have not that many ingredients but the ingredients that ARE in it are all stars in their own right. With pasta you just have to keep it simple and honest which will give you the most flavor in my opinion.

    I'd like to suggest making gnocchi from scratch if you have the time. It is simple, easy and cheaper than buying a box of the ready to use stuff. It is also a great way to get the kids into the kitchen. Obviously making it from scratch is more time consuming but it does freeze well so you can make a larger batch that can be used multiple times in the week.
