Rare Wagyu Beef - reverse seared over charcoal & wood

  • Grilling a thick Wagyu steak requires Reverse Searing: starting with about 30 minutes to 1 hour of low heat, depending on the thickness of the steak, bringing the internal temperature of the steak up to personal preference, rare (45°C/ 113°F), medium rare (50°C/ 122°F). After that the steak is grilled over high heat for 1 to 2 minutes each side to build up a flavourful crust. Taking the steak off low heat and applying direct high heat for some minutes will add roughly 5°C to the internal temperature of the steak.
Sirloin Steak (Striploin Steak), from grass-fed, free roaming (lean) Wagyu in New Zealand. Wagyu in Japan is usually grain-fed and therefore more marbled with fat.
Grass-Fed Wagyu is lower in marbling but higher in Omega-3 fatty acids, Vitamin E, Potassium, Iron and Zinc.

I do the same but cook in the oven first, using a remote thermometer. Remove from oven as soon as it hits the required temp and rest for at least fifteen minutes. Get the barby cranking hot and sear both sides, turning every minute till the steak has the required crust, this is called the Maillard Reaction.
No need to rest this time, get it down your neck, enjoy!

He probably could have gotten a much better steak for less money if he wasn't so focused on the name.

hey buddy, your video popped up on my home screen and i was actually just testing to ensure my new video adapter worked so i clicked on a random video - with that said, the "test" was whether or not the adapter would still run audio. And I'll tell you what - I am glad I accidentally clicked your video - your recording device is phenominal. I have a rather high end home theater and EVERYTHING was picked up on your microphone and the video quality is spot on, as well. So, now to actually see this steak cooked - Cheers!

It is wagyu. It's not A5 though. It's low grade A1 or A2 wagyu

Some peoples expectations are through the roof. That steak looks damn good to me. Preferences I guess.
