Rachel, you are so delightful. For the last 20 years I have not cooked very much. My husband left me after 23 years and of course my daughter is a wonderful woman with a family of her own. So, It is hard for me to get excited about cooking for one. But you have lit the fire under me so I am inspired. I have to start all over. Today I bought knives, 2 sizes of Dutch ovens some storage containers and some spices. It will take a while to accumulate the things I think I will need since I am on a fixed income. I use to make chicken fajitas that everyone raved about and I loved them. I always cook in light EVO. I cut up and cooked my chicken, added chopped onion that I browned. Garlic salt and pepper. Then I added S & W Southwestern Fajita Sauce. Then browned my flour tortilla and added the chicken and Mexican shredded cheese, parmesan cheese, sour cream, and guacamole. Man I almost cried when S & W stopped making this sauce. This was my favorite meal for company. Then when I found some at a discount grocery store, I bought all that I could find. I knew it was the discontinued end of stock. I even wrote the company asking for not the exact recipe, but just the ingredients. No answer. They really knew how to make it. I could tell by the label that they used lime juice and I think the various colors of bell pepper. Her recipe sounds great, I love paprika, but I never use cumin and chili powder rarely. Homemade tortillas, this woman is amazing.
Oh man... when I saw the flour tortillas the beans . I wish I had just one bite yummy. Maybe as soon as I feel better. Feeling a little under the weather right now. Love your channel.

I have a favorite Mexican restaurant and these were way better, I think a lot of it is the seasoning you use and the love which is an ingredient also. Using the same cheese also makes a difference. Ok this recipe be-steals my heart. Is the Oxaca cheese mild or is it a strong cheese? (anyone) I have to try this.
It's mild, you can use Monterey Jack or Mozzarella if you wish.
