- These Chimichangas are sure to please, children love them and it's an easy recipe to prepare. You can fill them with your favorite filling and they freeze beautifully too...they will definitely get you off of the regular meal routine... make it chicken, make it eggs, make it vegetarian, chimichangas are always a win win!

INGREDIENTS
1 & 1/2 lbs. beef bistec (cut into small cubes)
1/2 small onion (diced)
2 Roma tomatoes (diced)
1/2 green bell pepper (diced small)
1 jalapeño (diced small)
Oaxaca cheese (grated as needed)
2 large garlic cloves (minced)
3/4 tsp dried cumin
zest and juice of 1 lime
pepper (to your liking)
salt (to your liking)
2 C. beef broth
1 & 1/2 Tbsp flour
cilantro (small bunch)
crema (for garnish)
sour cream (for garnish)
Avocado (for garnish)

How many of you newbie subscribers like me feel like you could watch Rachel all day and feel like you’ve known her for a long long time?? She’s the kind of person you’d love to have as a neighbor too. Just watching her makes you feel that way. I think she’d be great on a show like MasterChef too….!! I am 73 & grew up on Mexican food. But Chimis are a newer form, our Hispanic cook always laughed about them but I have had a few at restaurants. I liked the fact that you served them with some of the meat.

I tried these and OMG they are so good! My hubby ate two! He loved them, Thanks sooo much for this wonderful recipe. I froze six and can't wait to pull them out of the freezer! I'm giving them the how long can they last test without me pulling them out and chowing down. Ha... not long, I'm sure.

Thanks for the great recipe and the helpful tips… mine stayed together beautifully with the help of the flour/water paste, and they stayed crisp and delicious because they were cooled on the rack.
