Kent, I'm not sure if I'm doing this right, but one of my favorite videos is your biscuit and gravy video. I actually use that biscuit recipe as my go to when making them. One of my favorite parts of the video, is when you were going to add the sugar, but it was "over yonder" in the car. Then the "pie, crumb, cutter deal." Then having to use what you have at hand, and making do, when you run off and leave the biscuit cutter at home. The fun you have doing the videos each week, making sure your fans are not only entertained, but come away with a fantastic recipe that can be shared with family and friends. They were OUTSTANDING! We like them better than the steak fajitas, only because steak can be hit or miss on quality around here. We just need to put a little more effort into that I guess. We used skinny chicken (thin) and cut them about 3/4” in width.

Interesting. I normally cook fajiitas at a much higher temp, on cast iron on the stovetop, but this look like a good thing to try. I usually use habaneros in mine, the flavor is so nice, my favorite pepper for sure.
I have found that Kent's mesquite seasoning is my favorite amongst so many seasonings I've tried throughout the years. Not saying many others aren't good mind you many, many are good.
Love ancho peppers. I grow them to dry and always have them fresh in season for customers who stop in and ask what are the peppers they need for grillin'.

The best way to cook fajitas is on a discada or disk cooker. I have been doing Friday Fajitas for years on mine. I usually just do green chile or habinero but I am going to have to try your seasoning.
Dear Kent, Growing up watching the TV series “Wagon Train” I always felt a special regard, not for Clint Eastwood as the character of Rowdy Yates, but for the character of Charlie B. Wooster, the chuck wagon cook. Mainly because he remained good-humored and optimistic even when trying to satisfy a bunch of drovers who expected a fair amount of him while subjecting him to a lot of good-natured kidding about his food. I’d wager no one has ever complained about your food, including your lovely wife. Even in jest. I’ve been watching your entertaining and instructive You Tube videos for the past six months and have to say I’m a big fan (I don’t like to pronounce “Worchester Sauce” either). This sincere praise comes from someone who has watched dozens of cooking programs on the Food Network, Netflix, the Travel Channel, PBS and other showcases. I’m 74, a semi-retired journalist, and someone who’s always loved to cook (and eat). I have the immodesty to think of myself as pretty competent in the kitchen (Asian being my specialty), but have learned a lot from watching your show, which also appeals to me in ways beyond the great food. Your sense of humor, your showmanship, your affection for people and generosity are all things I admire. You have a genuine gift for getting the most out of your ingredients and cooking methods, and you often make great dishes out of humble materials. But give you top-notch ingredients and there’s no limit to what you can do. The cowboy twist and spin you place on classic dishes of the world is really impressive. I also love how you improvise, create on the fly, and adjust so quickly when something goes wrong (like those nasty Oklahoma gusts of wind). Anyway, I just wanted to say “hello” and “thanks” to you and the Lady Shan (who appears to wear many hats, as well as being a terrific videographer), and to give a long-range pat on the head to your menagerie of trusty canine assistants. I've found if you soak the chicken in a brine for an hour or two, it seems more moist as well. Kinda like you do a turkey, but not as long.

Outstanding! Love all those veggies in there. I add just a little cheese inside then grill it, like you did in the backyard a while back. Grill mark it crisp then top with lettuce, sour cream, and salsa! OH YUM! Better have a 2 liter of cola and ice handy to round out the feast!

The best way to cook fajitas is on a discada or disk cooker. I have been doing Friday Fajitas for years on mine. I usually just do green chile or habinero but I am going to have to try your seasoning.

Growing up watching the TV series “Wagon Train” I always felt a special regard, not for Clint Eastwood as the character of Rowdy Yates, but for the character of Charlie B. Wooster, the chuck wagon cook. Mainly because he remained good-humored and optimistic even when trying to satisfy a bunch of drovers who expected a fair amount of him while subjecting him to a lot of good-natured kidding about his food.
I’d wager no one has ever complained about your food, including your lovely wife. Even in jest.
I’ve been watching your entertaining and instructive You Tube videos for the past six months and have to say I’m a big fan (I don’t like to pronounce “Worchester Sauce” either). This sincere praise comes from someone who has watched dozens of cooking programs on the Food Network, Netflix, the Travel Channel, PBS and other showcases.
I’m 74, a semi-retired journalist, and someone who’s always loved to cook (and eat). I have the immodesty to think of myself as pretty competent in the kitchen (Asian being my specialty), but have learned a lot from watching your show, which also appeals to me in ways beyond the great food. Your sense of humor, your showmanship, your affection for people and generosity are all things I admire.
You have a genuine gift for getting the most out of your ingredients and cooking methods, and you often make great dishes out of humble materials. But give you top-notch ingredients and there’s no limit to what you can do. The cowboy twist and spin you place on classic dishes of the world is really impressive. I also love how you improvise, create on the fly, and adjust so quickly when something goes wrong (like those nasty Oklahoma gusts of wind).
Anyway, I just wanted to say “hello” and “thanks” to you and the Lady Shan (who appears to wear many hats, as well as being a terrific videographer), and to give a long-range pat on the head to your menagerie of trusty canine assistants.
But, heavens, take smaller bites! I want to be watching new videos for years to come. (Admittedly, this is the pot calling the kettle black).
