  • The authentic recipe for pasta alla carbonara with guanciale, eggs and pecorino, as they are made in the Lazio (Rome) region of Italy. Our recipe has been tested by millions of readers, it has been published on the blog for many years.
    Spaghetti carbonara is very popular here in Romania, their recipe being often (unfortunately) distorted: with bacon (smoked) or with cream, etc.
    Instead of guanciale (pork jaw or cheek) you can use pancetta (dolce, non affumicata) - that is, that Kaiser from the pig's belly, not smoked. It is also allowed to use parmesan (parmiggiano) instead of pecorino. Some recipes provide for the exclusive use of yolks, others also allow whole eggs. The result of pasta carbonara made according to the above recipe is a wow! Their sauce is smooth, creamy and perfectly envelops the cooked "al dente" spaghetti.

    Superba reteta, o pregatesc destul de des si respect ingredientele cu sfintenie. Mai scap pancetta cand nu gasesc guanciale, dar restul sunt la locul lor. Cat despre cei "Doi italieni cu bun gust" Antonio Carlucio si Gennaro Contaldo, cred ca Gennaro a fost mentorul lui Jamie. Sper sa nu gresesc, sa ma fac de minune 🙂 Am urmarit emisiunile lor la TV si am si cartea. Felicitari pentru prezentare 👍😋

    In America nu se gaseste usor Guanciale, adica se gaseste, dar mai greu, eu pe langa mine nu am gasit, si am fost chiar la un magazin italian, vorba vine, ca aveau doar cateva produse importate din Italia si cand i-am intrebat de Guanciale habar nu aveau ce este, desi le-am spus si pork jowl or cheeks. Eu am facut carbonara si cu pancetta, si cu kaizer de la magazinul romanesc si au iesit bune. Si mai adaug si usturoi, asa imi place mie, stiu ca nu e in reteta originala.

      Cauta ti Italian market,care are si macelarie . Acolo au cu siguranta. Eu in Canada gasesc ,foarte buna,afumata la italieni.

      Pecorino e din lapte de oaie, un fel de cașcaval maturat. Nu se pot face paste carbonara cu telemea sau cu caș... mai ales că nu se pune foarte mult pecorino sau parmezan.

    V-am intrebat si nu mi-ati raspuns inca,de unde putem comanda paprika de Dorobanti,pare asa frumoasa,asa rosie,de nu-ti vine sa crezi!
