In Kentucky, we use hickory, it is everywhere & if you have them on your farm it is free wood, have to cut & split though, post oak/the dense white oak is costly as that is what all the Ky. bourbon distilleries use for wood stave barrels & lids/bottoms use to age the bourbon for a minimum of 4 years, then they are sold to scotch distilleries afterwards for scotch whiskey & they don't use the new dense white oak until the bourbon has aged which gives bourbon that distinct caramel color & somewhat vanilla flavor
Very interesting. I love hickory myself for smoking. Post Oak is abundant in Texas, and has unique characteristics well suited for low and slow. I am not an expert for sure, I just made this video a long time ago as an assignment at a storytelling workshop. What is your favorite place for BBQ in Kentucky? Maybe I can go there someday.
