  • Fried Seafood is a simple dish where raw materials and few essential technical gestures make the difference. Pasquale Torrente, an authentic sea cook from the Convent in Cetara (Amalfi Coast), illustrates all the secrets to obtain a perfect Italian frying and explains the procedure of the "scapece", a traditional technique to preserve leftover fried fish. Squid, mullet, sole, shrimp and the classical anchovies for a mixed fry that is a "gesture of love".

    Purtroppo qui al nord spesso quelle cose ce le sogniamo. Si, forse ne abbiamo altre, ma si sa che il giardino del vicino ha sempre l'erba più verde .
    Dico "scapece" e mi partono le ghiandole salivari e la libidine di quella ricetta. he bel video, sembra un documentario. Ps: però organizziamo una raccolta fondi per omaggiare all'Egregio Pasquale Torrente un paio di braghe meno "visual' 😉

      You don't have to remove it... My mom fried prawns since I was a child and we always ate it like that. You can still remove it if you want when you remove the shell. My mom makes it better that this and we're not Italians.
