Copycat Lofthouse Cookies that Beat the Store-Bought Ones

  • You can make perfectly soft Lofthouse cookies right in your own kitchen. My carefully-tested copycat recipe is surprisingly simple, with all the flavors of the real thing but none of the artificial stuff!

    Ingredients
    Cookies
    1 cup unsalted butter, softened (226g)
    ¾ cup granulated sugar (150g)
    1 large egg + 1 large egg white
    ½ teaspoon vanilla extract
    3 ¼ cups cake flour (375g)
    1 Tablespoon cornstarch
    1 teaspoon baking powder
    ¾ teaspoon table salt
    Frosting
    ¾ cup unsalted butter, softened (170g)
    2 ¼ cups powdered sugar (280g)
    1 Tablespoons light corn syrup
    1 teaspoon vanilla extract
    ⅛ teaspoon table salt
    Food coloring (optional)
    Sprinkles (optional)

    Instructions
    00:00 Introduction
    Cookies
    00:31 Combine butter and sugar in the bowl of a stand mixer (or in a large bowl using an electric mixer) and beat until light and creamy.
    00:56 Stir in egg, egg white, and vanilla extract until thoroughly combined.
    01:24 In a separate bowl, whisk together cake flour, cornstarch, baking powder, and salt.
    01:38 With mixer on low-speed, gradually add dry ingredients to wet until completely combined.
    02:01 Form dough into a 1” thick disk and cover tightly with plastic wrap. Refrigerate for 1 hour.
    02:27 Once dough has chilled, preheat oven to 350F (175C) and line baking sheets with parchment paper.
    02:32 Remove dough from refrigerator. Transfer to a clean, lightly floured surface and use a rolling pin to roll dough to be between ¼-½” (about 1 cm) thick (if too is too sticky, return to refrigerator, if it is too difficult to roll and/or is cracking, let sit at room temperature for a bit before trying to roll again).
    03:21 Use a 2” (5cm) round cookie cutter to cut out cookies as close together as possible and place on prepared baking sheet, spacing cookies at least 2” (5cm) apart.
    03:58 Bake in 350F (175C) oven for 8-10 minutes. Allow cookies to cool on baking sheet for at least 5-10 minutes before carefully removing to cooling rack to cool completely.
    Once cookies have cooled completely, decorate with frosting.
    Frosting
    04:19 In a large bowl (or stand mixer) using an electric mixer, beat butter until smooth and creamy. Add about half the powdered sugar, corn syrup, vanilla extract, and salt and stir until smooth and thoroughly combined, then gradually stir in remaining powdered sugar. If using food coloring, stir it in at the end adding a small bit at a time until desired color is reached.
    05:26 Spread or pipe frosting evenly over cookies (I use a ½” open tip) and decorate with sprinkles, if desired.

    Never had them, you never have steered me the wrong way, even with the potato chips in the chocolate chip cookies!! The salty chips made the cookies so bomb!! Very addictive.

    I use a yard stick cut in half and roll out the cookie dough between the two pieces to get perfect, even 1/4 inch thickness.

    Hey I just wanted to let you know I tested out this recipe. My first batch of cookies were a lil over baked and crisper than the store ones. The second batch I made I under baked and when cooled they were soft and sweet from the frosting. Definitely a great recipe and very close to the same sugar cookies in the store but way cheaper and way more in quantity. Whether a lil over baked or soft the flavor is spot on and delicious! I give this recipe a 10/10.

    The cookie itself is absolutely perfect. I over whipped my frosting, but the flavor is delicious. Only thing I’d change is that sprinkles are required, not optional. 😂

    To make your own cake flour put 2 tablespoons corn starch or arrow root in measuring cup then measure APF on top of that found this at "the kitchn" . I wonder if we grind the APF in a nutra bullet scence cake flour is a finer grind than APF
    I made these and everyone says there way better than store bought.😊

    I used just the 1 egg and rolled it into balls, refrigerated them while my oven was finished preheating, they came out Great, I don't like frosting so I dipped half of every ball into sprinkles and pressed them with the flat part of my measuring cup, Delicious, I did take out 1/2 a cup of butter and added 1/2 a cup of sourcream, because I didn't want to use all my butter, Thanks for the Recipe :)

      It may be possible to do but you’d probably have to chill it a good bit longer. I personally haven’t tried it.

      Unfortunately whole wheat is a more coarse and heavy flour than even all purpose flour (which I also don’t recommend because it’s heavier than the cake flour I do like to use here). While you could swap a bit in, I think it would really affect the texture and take away from the light cakey texture that makes these so much like their store bought counterparts. However, if you aren’t worried about that or going for that authentic taste and texture, you could probably get away with strategically swapping a bit!

    Is all purpose flour a good substitute for the cake flour or will it cause a big difference

      Unfortunately in this recipe it does make a pretty significant difference in the final texture. You can substitute it and I talk a bit more about this in detail on the post on my blog, but cake flour is really best here.

      For authentic taste and texture I recommend cake flour. All purpose flour, when substituted correctly, “works” but it doesn’t have the same lightness to the texture as the store bought cookies.

    I’ve been told that the lofthouse cookies do use baking powder and baking soda. Does this change anything from the current recipe.

      This one does use baking powder. For best results, I don't recommend changes to the recipe. They actually use a lot of extra artificial ingredients in the creation of their cookie so this is a just a remake of theirs, not the exact recipe. :)

    I never use unsalted butter. Would using salted butter, and omitting the extra salt, cause the cookies to spread, instead of rise? Will it change the texture of the cookie from soft to crisp? These are my son’s, (and now my grandson’s), absolute favorite store-deli bought cookies! They are just getting waaay too expensive!!!!

      I do really recommend it for the most true-to-the-original texture. I tried with all purpose and it just wasn’t as authentic.
