    After I published two videos recently on the short cut version of Keto Butter Cake with almond flour and coconut flour respectively, some of you requested for a combo of almond and coconut flour. I tried it and it turned out so well - buttery, moist and delicious!
    Instead of the usual 8x4 inch loaf pan, I used a 6-inch round pan with a removable bottom and I love the look of it. The only thing is that it took slightly longer to bake as the cake was quite thick. As usual, it is super easy to make with no tools required which means less cleaning.

    NUTRITION INFO PER SERVING
    Total Carb = 2.2 g
    Dietary Fiber = 1.1 g
    Net Carb = 1.1 g
    Calories = 207
    Total Fat = 20.7 g
    Protein = 3.9 g
    DRY INGREDIENTS
    Almond flour = 150 g / 1 1/4 cup
    Coconut flour = 40 g / 5 3/4 tbsp
    Baking Powder = 12 g / 3 tsp
    Monk fruit = 80 g / 6 1/3 tbsp (This is mildly sweet so you can increase to 100g if you prefer it sweeter. You can also use any other keto friendly sweetener.)
    Salt = 3/4 to 1 tsp
    WET INGREDIENTS
    Unsalted Melted Butter (room temperature) = 225 g / 1 cup
    Whole large eggs (room temperature) = 4 / 230 g
    Vanilla Extract = 1 tsp
    DIRECTIONS
    1. Preheat the oven to 350 F or 180 C.
    2. In a bowl, add all the wet ingredients and whisk until well combined. Set aside.
    3. In a separate bowl, add all the dry ingredients and mix until well combined.
    4. Add the wet into the dry ingredients and whisk until well combined. The batter is thick and smooth.
    5. Pour the batter into a greased 6-inch (15 cm) round pan with a removable bottom. Line with parchment paper at the bottom. You can also use an 8x4 inch loaf pan lightly greased and lined with parchment paper. Spread evenly.
    6. Bake at the middle rack for 60 minutes or until a wooden skewer comes out clean. If you use an 8x4 inch loaf pan, the baking time will be slightly shorter around 45 to 55 minutes.
    7. If the top is browning too fast, cover with foil.
    8. Once ready, cool for 15 minutes then remove the cake from the pan. As an option, you can rest the cake upside down for 15 minutes as this will help to prevent the butter from settling at the bottom. Then turn over and slice accordingly.
    9. The cake can be served warm. To reheat, just microwave for 30 seconds for a warm, soft and fluffy texture.
    10. This recipe makes about 8 to 12 servings for the round 6-inch pan or 14 to 16 servings for an 8x4 inch loaf pan.
    11. The cake can be kept at room temperature for about 2 to 3 days if you have a cool and dry climate. Otherwise, it is better to refrigerate earlier for up to a week or freeze for months.

    Very good. The mixture of coconut and almond flour was a good combination. Very moist, soft and not too crumbly. I zested a lemon in my mixture and it was like a lemon pound cake.

      Before melting. For accuracy, it's best to weigh out 225 g of butter then melt it

    I was very excited to try this recipe. The texture is just like real cake but for some reason it was salty. I followed the recipe that called for unsalted butter but to add a tsp of salt. What did I do wrong that I am not getting the same result as the others have commented. :(

      You can reduce the amount of salt as you find it salty. Everyone's taste is different, so you can adjust accordingly. Try reducing between 1/4 to 1/2 tsp.

      Frankly, I don't have any experience with coconut sugar, so I am unable to advise. You could estimate and adjust to taste.

      These are cup and spoon measurements but since they are not the same everywhere, I always recommend to weigh the ingredients for accuracy

      The batter is actually quite thick..But if yours is way thicker then it could be the coconut flour. Some coconut flour are more absorbent than others. I have personally experienced that and so I stick to the ones that are normal.

      Butter Cake tends to be oiler due to the amount of butter which is the star of the cake. Did you turn it upside down after baking so the butter will spread evenly? Also the amount of butter will make the cake slightly denser. It's important to weigh the ingredients for accuracy. If you prefer lesser butter you can try my other basic cake in the cake playlist 🙏

      Unfortunately, I have not been successful with eggless cakes and even pancakes. I have experimented with it countless times but it just could not work even with flaxseed eggs, xanthan gum etc. If you have any tips do let me know 🙏

      I’ve seen people use a flaxseed water mix in place of eggs. Maybe that’s something you can explore?

      @@vmercado994 Yes that is flax eggs as I mentioned but it can't work unfortunately. It was frustrating after countless experiments but hopefully something will come up one day 🙏

    I tried as well but the inside cake was brown colour not yellow like yours..otherwise good

      I got it i should have used blanched almond flour😂

    Cake is too greasy
