Sam, you are my ABSOLUTE FAVORITE!!!!! I use your recipes constantly. They are all perfection, IMO. I share a lot of your vids and recipes on social media and ALWAYS encourage others to follow you as I do. You are thorough, genuine, and not at all pretentious (which I adore 😘). I broke out a coconut cake recipe and video that I used about 4 years ago which was also great but then I thought "what would Sam do?" Just watched this video and GIRL !!!! I will be using yours for Christmas 2021 instead. Ty for ALL you do. Again, I watch, follow, and share tons of folks but YOU are the ultimate!
Thank you so much!!! I really appreciate it. I'm so glad you've enjoyed everything so much! Thank you for all of the shares. It really helps me keep going. Merry Christmas! :)
OMG! 👍👍👍 Made this cake for my wife's BD as coconut cake is her favorite. It was worth the multiple steps. You are also right that it gets even better the next day when it has had a chance to absorb the frosting. Also the frosting was great...not too sweet. Thanks for a great recipe!
I asked my sister in-law what kind of cake she wants me to make her for her birthday and she wants a coconut cake. Thank goodness I found your recipe! I am making this for sure. Thank you, Sam. Blessings from tiny Staples, Texas.
Thank you Sam for a lovely coconut cake recipe also thanks for sharing your grandma's recipes i do like your frosting. When I do try it I will let you know thanks dear and take care 🌹
I love your video quality and closeups. Very very helpful. I also enjoy your cooking style. Thanks for explaining in advance what to expect. Looking forward to more of your videos!
You are my favorite to get my recipes! All of your recipes turn out perfect! Can you tell me why you use sour cream? It is great, just wonder what it does. Thank you! 🤗
Can you use cake flour instead of all purpose flour for the sponge? Also if I were to add coconut flakes to the filling on the inside, should I put a layer of filling and then just sprinkle the coconut flakes on top before adding the second sponge? Thank you so much for sharing!! I’ve watched all the coconut cake recipes on TH-cam and yours looks by far the Best!💕
You could use cake flour if you'd like, but you need to make sure to use the proper substitution. You need 1c + 2 TBSP of cake flour for every cup of all purpose flour. I think adding the layer of coconut in between the two cake layers sounds like an awesome idea! :)
I do not for this recipe. If you like the crunchy texture on top of the soft cake you could certainly give it a try. 😊 I just prefer the soft texture with the soft cake.
Would it be possible to add rum to this recipe and bake it as cupcakes? Same question for your chocolate cupcake recipe: Could Bailey's or Kahlua be added? Sidenote: I've previously made you jumbo cookies and worst cookies ever, which were a huge win. So when I decided to test recipes for a party of 4, 20-somethings, I had to come back! So far your recipes are killing all the others. 😁 They have been so good (Oreo and Confetti)! They have been kid and mom approved too. ❤️ Thank you so much!
It would take a good bit of experimenting to get a good answer here. Unfortunately you would probably need a good bit of rum to get a good flavor out of it and I'm not sure how adding all of that extra liquid will work. You would be better off using a rum extract instead of adding rum. I'm so glad you have enjoyed everything so much!
Unfortunately I haven't tried a coconut essence or flavouring so I can't say for sure how it would turn out. If you do try it, please let me know how it goes. :)
Just found your channel, 🥰 this cake looks so good, I can not bake well, I am hoping I can learn a lot from you, I like your explanation through out the whole video ! Thank you 😊
U do it very different than other recipes - they don’t whip the whites until stiff peaks separately, will this create a more chiffon cake like texture?
I think it would be fine if you used a melted coconut oil though the cake may not be quite as moist the next day. If you’re looking for a different canola substitute, you could always try avocado oil that one has worked well for me. I hope that helps!
It really depends on the recipe. In this cake we stabilize the egg whites later and the cream of tartar could mess with the flavor and consistency of the cake.
Hi, I just finished baking the cake. It came out well. However when I attempted the frosting, it was separating. It does not have the consistency and texture like yours. I need help. My mother's bday is tomorrow and I want to finish
Hmmm that's really odd. Honestly I have never had this issue with this frosting so I can't really say why it would be separating. I'm sorry I can't help any more. :( Maybe just try to keep going until it comes together.
The batter turned out kind of thick, so I added more oil...i used 9 inch pans and I have them in the oven for 20 minutes. Praying and hoping it turns out!!!🙏
Do you use coconut milk in the dairy section or coconut milk in a can? Could this recipe be baked in a rectangle cake pan as well, inverted, then frosted and coconut bathed. LOL
I've looked at several recipes, and you are by far is the best. Less complicated and great presentation of finish product
Thank you! I hope you love it! :)

You are my favorite to get my recipes! All of your recipes turn out perfect! Can you tell me why you use sour cream? It is great, just wonder what it does. Thank you! 🤗
Thank you so much, Michelle! Sour cream adds moisture, flavor and tenderness. It's one of my favorite secret ingredients. 😊
I love coconut cake !
I can never get enough!! 😊😊
I just found you today. I love your presentation and the cake looks delicious. Looks like a recipe I will try...ummmm
I hope you love it! I look forward to hearing from you in the future!!
I’ve done this cake just I cheat because my wife works in a bakery she provides the frosting
Greetings Sam , So I'm going too try this wonderful cake, Have a party on Friday 4/31 and I know is going too be a hit!! Thank you
Hi !!!! This recipe aounds really good ! Can I use coconut oil instead of canola oil ?
Wow very nice channel. I am a new subscriber. Thank you for the nice video

Sugar Spun Run Great, thank you so much for getting back to me! I’ve just subscribed and can’t wait to binge watch all your videos😂
You can find frozen shredded coconut in Asian grocery stores just fyi 😊
Yummmmm 🤤 do u suggest toasted coconuts?
I do not for this recipe. If you like the crunchy texture on top of the soft cake you could certainly give it a try. 😊 I just prefer the soft texture with the soft cake.
Yez girl. That's how granny did it. She passed and I lost the recipe. Thanks so much.
You are so welcome ❤️
what exact time would you recommend for baking this in a 9-inch cake pan? thanks!

@@SugarSpunRun Wow! Duh. LOL. I completely forgot about rum extract. Thank you!
add 1.5 teaspoons or even a tablespoon of rum extract OR make a simple syrup add 2 tablespoons of bacardi and trust me girll it’s to die for
Why do you use shortening with butter, in your coconut cake? I don't usually like to use shortening in recipes. Thanks for your help.
I'm having a little trouble finding coconut extract where I am, could I possibly use coconut essence or coconut flavouring instead?
Unfortunately I haven't tried a coconut essence or flavouring so I can't say for sure how it would turn out. If you do try it, please let me know how it goes. :)
@SugarSpunRun I'll will let you know as soon as my dad tastes it but I just know that he will give me the thumbs up. Your recipes are just amazing!!
Just found your channel, 🥰 this cake looks so good, I can not bake well, I am hoping I can learn a lot from you, I like your explanation through out the whole video ! Thank you 😊
Thank you so much! I hope you love it! You can do it! Let me know if you have any questions. 😊😊😊
U do it very different than other recipes - they don’t whip the whites until stiff peaks separately, will this create a more chiffon cake like texture?
Wow!
Thank you so much! 😊
Also you give off a cool Alicia Silverstone vibe!
Hi Sam, quick question, will i get the same results if i use coconut oil instead of canola?
I think it would be fine if you used a melted coconut oil though the cake may not be quite as moist the next day. If you’re looking for a different canola substitute, you could always try avocado oil that one has worked well for me. I hope that helps!
@@SugarSpunRun Thank you very much! You have literally changed my life for the better!
Sam, I'm curious as to why you don't use Cream of Tarter when whipping egg whites. Do you feel it negatively affects the egg whites in some way?
It really depends on the recipe. In this cake we stabilize the egg whites later and the cream of tartar could mess with the flavor and consistency of the cake.
Are you able to make cupcakes with this recipe?
I need to make this real soon 😭
You won't regret it! ☺️
Can I make this into cupcakes?
Do you get the coconut taste in the cake and frosting???
I need to make this today
Yup. For a stronger taste make sure to use coconut extract. :)
Hi, I just finished baking the cake. It came out well. However when I attempted the frosting, it was separating. It does not have the consistency and texture like yours. I need help. My mother's bday is tomorrow and I want to finish

I would like to know what the use of only egg whites and not the whole eggs?
How about adding some coconut flakes into your batter?
Sounds delicious! :)
No buttermilk? Still looks great though
No buttermilk needed here. :)
@@SugarSpunRun yes you’re absolutely right 😋
🥥 🌴This looks Deelish! 🥥 🌴 👏
I hope you love it! 😊
can i changed to whole wheat pastry flour?
I’m not sure how that will work without other alterations being made. 😔
Can we substitute Sour cream with plain yogurt?
You would need plain greek yogurt. :)
I need you grandmother recipe please can't find mine
She actually just uses a box mix with this icing. 😂
Any substitute for shortening???
You could try using all butter. ☺️
Can I use olive or corn oil?
I wouldn’t use olive oil you want a neutral oil here. Corn oil will work. 😊
The batter turned out kind of thick, so I added more oil...i used 9 inch pans and I have them in the oven for 20 minutes. Praying and hoping it turns out!!!🙏
O no! I hope it turned out for you
looking good but why so much sugar.
It’s a cake. 😊
Question, can you substitute coconut oil in the recipes where you use canola/vegetable oil??
Some will work, and others won't. It really depends on the recipe.
You lost me at flour for the icing.
You won't even taste it. It's definitely worth a shot! ☺️
Ever tried a little banana in that?
Banana has a very strong flavor It doesn’t matches coconut ewwww!
I have not tried it
If that was true then they wouldn't make banana coconut cream pies, which are my favorite pie in the world...
Do you use coconut milk in the dairy section or coconut milk in a can? Could this recipe be baked in a rectangle cake pan as well, inverted, then frosted and coconut bathed. LOL
I use the coconut milk in a can. This will fit in a 9 x 13. ☺
Call Tom Cruise
Please substitute for sour cream
Plain Greek yogurt should work!
