    I’ve been making this cake for years except I put a raspberry filling inside. And I chop up the coconut instead of leaving it just shredded! One of my favorites!!!!!!❤️❤️❤️❤️❤️🎂🎂🎂🥥

    This is a great recipe. I made it 3 times already. I did use 3 oz of coconut milk by reducing buttermilk.

    I made the cake and it turned out amazing, although I used coconut milk instead of buttermilk. Please, can I get the recipes in grams? It wasn't really easy converting the ingredients to grams.

    I have made this cake, it's delicious! I used buttercream frosting, ( halve butter, half shortening) added coconut extract!! Delicioso!!!

    I made this cake for my friends birthday and omg it was so good, I just tweaked it by making a pineapple curd filling, so it was a pina colada cake, fantastic! several people said it was the best cake they had ever eaten!! thanks for the great recipes!

    I just finished putting together this cake. I'm enjoying it. However, on my part, I filled it with lemon curd. The curd overpowers the coconut. So, lesson learned.

      Angela Terrell honestly, still sounds great. I can see where you were trying to go with it. Lemon and coconut does sound delicious! Maybe a little less lemon curd to just add a hint of freshness? I will definitely give the lemon twist to this cake when I make it lol

    This is a good recipe, I followed the steps in making this, but found when it came time to add the egg whites, they were runny. I stirred them until I got stiff peaks, which was great, but they sat while I did the rest, I assumed they would stay that way. Next time I make this, I'll hold off blending the egg whites :)

    Hai Liz I made this cake for my husbands 30th birthday last week. It turned out so good . But unfortunately my frosting started to curled up while whipping I have no idea why and what went wrong . So I added corn flour and made it little ok consistency to frost and popped in the freezer. I would love to know why my frosting loosing up and curled please

      I think maybe the ingredients were not all the same temperature. Butter and cream cheese must be soft when you put your finger in it. Room temperature. Hope this helps. I am from the South and made this with my mom for many years.

    I haven't made very many cakes from scratch because most of them are too light. I was looking for a cake that was a bit denser and I didn't have buttermilk so I used sour cream thinned with coconut milk. It turned out amazing, thanks 😊

    I recommend this recipe! I made it for my Dad’s Birthday, and he LOVED it!!! I think I added to much salt, 😅but it was still SO good. Thank you SO much for these AMAZING recipes ❤️ I so much enjoy watching them 😃 And to add some more coconut flavor, (for those of you that don’t have coconut extract) You can soak some 2-3 tablespoons of coconut in milk, and soak your cake in it

      I thought so too! Most coconut cake recipes use coconut milk.

      Another tip is substituting a little of the oil/fat with coconut oil. I have done this and it gave the cake a more flavorful character.

    I'm not a big fan of that sugary coconut flakes. I do however like toasted coconut. You said you didn't like how the cake looked with toasted coconut all over it. I'm thinking maybe toasted coconut on just the top with the white coconut all around the sides. I think that will look nicely.

    I adore coconut and so does my Mom. I am also in love with that mixer! Unbelievable! I checked thru your link...ouch. But not as much as I expected. Kitchen Aide was always my dream but I gave in and bought a cheap stand mixer which I haven't used yet. And now I will never unsee that fabulous Bosch. Wonder why they just didn't go right to making them this way? Open like that. I'd say maybe I can save for one but getting old here. Not an easy solution anymore.
