    Very simple to make, chewy and glutinous but soft and smooth

    ‘Silver Pin Noodle’ is a traditional Hakka noodle originating from the Meizhou area of Guangdong. Each ‘strand’ of noodle is individually rolled, shaped like a mouse with both ends pointed, leading to many Hakka people often referring to them as ‘Rat Bǎn/Fun’. After it was introduced to Hong Kong, it became known as ‘Silver Pin Noodle’ due to its needle-like appearance. Smooth and chewy in texture and semi transparent when cooked, it is equally delicious whether fried or used in soup.
    Home-made ‘Silver Pin Noodle’ is so simple to make at home. So if you, like me, craved for some but can’t get hold of any in your local Chinese supermarket. why not give this recipe a try?
    銀針粉是一種客家傳統麵食源於廣東梅州一帶. 因為其兩端尖,形似老鼠,客家人稱為老鼠粄/粉’. 傳到香港後,港人以其兩頭尖尖,形似銀針的外觀,遂冠以雅稱:’銀針粉’。煮熟後色澤透明口感爽彈。無論翻炒或湯煮同樣美味.

    Ingredients 材料:
    Dough 麵團:
    Wheat starch (澄麵/小麥澱粉) 100g
    Tapioca starch (木薯粉) 40g
    Rapid boiled water (滾水) 140ml
    Vegetable oil (植物油) 1 tsp (茶匙)
    Salt (鹽) ¼ tsp (茶匙)
    Accompaniment 配料:
    King prawns (大蝦) 10 (粒)
    Shallot (紅蔥頭) 25g
    Shiitake mushrooms (香菇) 2 - rehydrate in advance (提前浸軟)
    Carrot (紅蘿蔔) 50g
    Spring onions (蔥) 2
    Ham (火腿) 50g
    Beansprouts (芽菜) 70g
    Beaten egg (雞蛋液) 1
    Seasoning 調味料:
    Salt and pepper to taste (適量鹽和胡椒粉)
    Light soy sauce (生抽)
    Sesame oil (麻油) ½ tsp
