Sweet chestnuts are in season around the middle of October in the UK. We go chestnut picking as usual and ended up with a large basketful.
Sweet chestnut chiffon cake is one of my favourites. Light and fluffy chiffon cake paired with home-made rich aromatic chestnut puree - a cake lover’s heaven! It can be easily transformed into a beautiful birthday cake with a few simple decorations.

Ingredients 材料
Makes one 6 inch round cake (做一個6英寸的圓形蛋糕)
Chestnut Puree 栗子泥:
Fresh shelled/skinned sweet chestnuts (去殼去皮栗子) 200g or ready to eat ones (或即食栗子)
Unsalted butter (無鹽牛油) 30g
Cane sugar (蔗糖) 30g
The above ingredients make about 300g chestnut puree (以上材料製作約300克栗子泥)
Cake Batter 蛋糕麵糊:
Low gluten/cake flour (低筋麵粉) 50g
Egg yolks (蛋黃) 3
Vegetable/corn oil (植物/粟米油) 30g
Milk (牛奶) 30g
Sugar (糖) 15g
Meringue 蛋白霜:
Caster sugar (細砂糖) 40g
Egg whites (蛋白) 3
Lemon juice or White rice vinegar (檸檬汁或白米醋) 1/4 tsp (茶匙)
Frosting Cream and Chestnut Cream ingredients抹蛋糕面奶油和栗子奶油層:
Double cream (奶油) 300g
Icing sugar (糖粉) 10g
Chestnut puree (栗子泥) 200g
Garnish 裝飾:
Chestnut puree (栗子泥) 100g
Extra cooked chestnuts (熟栗子) 6 pieces (粒)
A few Rosemary tips (幾枝迷迭香尖)
Fresh fruits of your choice (自選新鮮水果)
