I made chicken like this tonight! Next time I will use parchment paper - I used a silpat instead. The addition of lemon juice was amazing! I did add garlic and onion powder and I think I added too much thyme, but it was good. The bowl idea is fantastic! I am considering grilling them some time too. My husband does not normally like thighs, so I did not tell him until after we ate. He said he would eat it again as long as fixed in the same or similar fashion! Two more items cleaned out of my freezer - yay for me!
Hello! Searched yesterday for tips for cooking dark chicken thighs in the oven. Your idea to use a bowl was brilliant. 375 for 30 minutes was spot-on perfect too. I never checked them until the timer rang, and they were moist, fully-cooked perfection.

I'm seeing varying cooking temperatures for boneless skinless chicken thighs. Your recipe says 375 for about 30 minutes another one I just saw for the same thing says 450 for 40 to 50 minutes... So now I'm really confused
I'm guessing 40-50 minutes would be for a chicken thigh with the bone still in. When the chicken is boneless it cooks much quicker. Hope that helps!! :-)
I am obsessed with dark meat and feel it has more flavor but the Mr. Hates it. Would the garlic, thyme and lemon help curb the gamey taste? I think it's wonderful but he's just as picky as my children.
I agree about the flavor part...plus chicken thighs are more forgiving when it comes to drying out. I think if you marinate them for a few hours in the fridge that might do the trick for your picky eater. I don't find them "gamey" but I know we all have different palates.

I do the chicken thighs and save time with the seasoning by just sprinkling Italian dressing. Works great all the spices in on bottle.
