Interesting take. I snuck a peak one time inside the Blonde Giraffe kitchen. They had a copious and ridiculous amount of corn starch which I found suspect since they only make key lime pie. Their “recipe” is basic AF. But their texture in the Frozen pie on a stick will never work from that recipe. Still on a quest to replicate. Thanks for the breakdown.
@@ScottD-q9p You are correct. The three tablespoons (per batch) equal about .25 per (10-inch) pie. Traditionally, the chemical reaction of the lime's acidity and the egg yolks causes the filling to congeal and the filling to set up. This has proven difficult (impossible) on a large scale.

What's the powder that gets added to the lime juice? Are they not baking the filled pie? Does the acid from the lime juice cause the condensed milk and egg yolks to set up without baking?
I noticed they heated the lime juice. Originally they never baked because acid does make cond milk set. It gets firmer with a short bake so heating the juice may be equivilant. I read too much Cook's Illustrated.😊

We sell them "naked" and they hold their own quite well. We do recommend topping them with fresh whipped cream (no lazy whip) however, if we sold them topped with fresh-whipped, it would turn into a puddle by the time the buyer got it home. Cheers.
Just saw their comment. Makes sense. I used to make pies for a restaurant and found 1tbl instant pudding added to the whipping cream kept it stablizes for a week. Probably would not hold up for long periods in heat, but they did for my delivery.

@@mipani I believe the yellow cream is the sweetened condensed milk. The orange is the egg yolk; the crust is graham crackers with melted butter.

Something did not understand what the slurry consists of? Squeezed lime, starch, egg yolk?
For sure the lime juice, egg yolks, and sweetend condensed milk. I have no clue what the powder was that was added to the lime juice though.
Pretty sure the powder was gelatin. They bloom it in the lime juice then heat it to thin it out so it will incorporate evenly in the mixture.
