I learn so much by watching the Amma in these videos. When I went to India years ago, I liked South Indian food best. For years there were no cookbooks available in the US on the southern cooking styles. That's getting better, but watching this finally helped me understand why coconut milk is a popular ingredient. Fresh coconuts are super expensive here, so I've tried making it from dessicated coconut. It's a slog. It looks like it's a lot easier with fresh coconut and you I bet you can use the spent solids in a thoren too.
Its better to discard the spent solids after extracting the coconut milk because all the juice and taste would have been extracted out and the coconut would have lost its flavour. The thoran will not taste good.
Ingredients: Chicken curry: Chicken- 1kg Ginger-1 nos Garlic- 10 to 12 nos Onion - 3 nos Tomatoes- 2nos Grated coconut- 100g Curry leaves Green chilies-3 to 4 nos Turmeric powder- 1 tsp Pepper powder- 1 tsp Red chilli powder- 2 tbsp Coriander powder-1 tbsp Garam masala powder- 1 tsp Rice dumplings: Coconut milk -2 cup Rice powder- 250g Cumin seeds- 1/4 tbsp Salt -a pinch Grated coconut- 50g Method: Chicken curry Firstly we have to peel onions and set it aside Cut tomatoes and keep it aside Then peel garlic and keep it aside Then peel ginger and keep it aside Wash the onions garlic and ginger Chop the onion and set ut aside Cut the green chilli and keep aside Crush the ginger and garlic in to fine paste and keep it aside Extract coconut milk from grated coconut Heat oil in a pan and add chopped onion and saute it and add a tablespoon of salt and mix well Then add ginger garlic paste to it and mix Then add green chilli and curry leaves and saute well After the onion turns slightly brown add 1 teaspoon of turmeric powder, 1 teaspoon of pepper powder, 2 tablespoons of red chilli powder, 1 tablespoon of coriander powder, 1 teaspoon of garam masala Mix well Add chopped tomatoes and saute well Then add chicken in to it and mix well add half a cup of boiled water and mix again Then close the pan and cook it for 10 minutes Then add the coconut milk in to it and cook for 10 more minutes Check whether the chicken is cooked or not Once the chicken is ready Remove from the fire and set aside Rice dumplings Take 250g of rice flour in a bowl add a pinch of salt Add cumin seeds to it mix it Then add grated coconut to it and mix it with boiled water then knead the flour well and make it like chapati dough Then roll it in to small balls Boil the coconut milk in a pan and add the rice balls in to it and stir other continuously till the consistency changes Once the dumplings are ready Remove them from the fire and set aside Serve the tasty rice dumplings with the chicken curry

When insee her cutting veggies so neatly without using a cutying board and grinding on tje stone, i think of my grandmothers and how tasty their food was!

It's easy, place a portion of rice balls and chicken curry on your plate. squash a rice ball add a bit of curry with the chicken and spoon it in your mouth. We use our fingers so we mix the two together.

just buy organic tinned coconut milk. non organic has stuff like xanthan gum in it but the organic lines are just straight up coconut & water.

Ingredients:
Chicken curry:
Chicken- 1kg
Ginger-1 nos
Garlic- 10 to 12 nos
Onion - 3 nos
Tomatoes- 2nos
Grated coconut- 100g

Pepper powder- 1 tsp
Red chilli powder- 2 tbsp

Rice dumplings:
Coconut milk -2 cup
Rice powder- 250g
Cumin seeds- 1/4 tbsp
Salt -a pinch
Grated coconut- 50g
Method:
Chicken curry
Firstly we have to peel onions and set it aside
Cut tomatoes and keep it aside
Then peel garlic and keep it aside
Then peel ginger and keep it aside
Wash the onions garlic and ginger
Chop the onion and set ut aside
Cut the green chilli and keep aside
Crush the ginger and garlic in to fine paste and keep it aside
Extract coconut milk from grated coconut
Heat oil in a pan and add chopped onion and saute it and add a tablespoon of salt and mix well
Then add ginger garlic paste to it and mix
Then add green chilli and curry leaves and saute well
After the onion turns slightly brown add 1 teaspoon of turmeric powder,
1 teaspoon of pepper powder,
2 tablespoons of red chilli powder,
1 tablespoon of coriander powder,
1 teaspoon of garam masala
Mix well
Add chopped tomatoes and saute well
Then add chicken in to it and mix well add half a cup of boiled water and mix again
Then close the pan and cook it for 10 minutes
Then add the coconut milk in to it and cook for 10 more minutes
Check whether the chicken is cooked or not
Once the chicken is ready
Remove from the fire and set aside
Rice dumplings
Take 250g of rice flour in a bowl add a pinch of salt
Add cumin seeds to it mix it
Then add grated coconut to it and mix it with boiled water then knead the flour well and make it like chapati dough
Then roll it in to small balls
Boil the coconut milk in a pan and add the rice balls in to it and stir other continuously till the consistency changes
Once the dumplings are ready
Remove them from the fire and set aside
Serve the tasty rice dumplings with the chicken curry
