Then transfer the batter into a bowl and fermented for 1 or 2 hrs. After fermentation add some salt and combine them well. Heat a cast iron pan. When the pan becomes hot, pour and spread the batter. Once the dosa edges look lacy and golden-brown and the top has dried out completely then flip the other side and cook for few minutes , remove to a plate. Serve the delicious dosa with chutney . When before the mixies arrived in the market the ladies used to grind the batter with hand on the hand stone grinder at home ! Now we cannot even imagine it. I remember during 1970s period, as kids we used to help our mother in rotating the hand stone grinder. It was quite an exercise & I now shudder to think how my mother regularly on every Saturday used to grind Rice & Dal in the hand stone grinder herself sitting for hours & hours together and also make coconut chutney to serve us tasty Doshas & Idlis on Sundays ! It was really a very very tough job but her love to feed us prevailed over everything.
We are North Indian and my mom and sisters used to do it on regular sil batta...it was a task...we were trying to find this grinder but soon mixi came out when it was my turn to learn lol

From Tamilnadu my grandma used to grind batter in hand grinder like but tamil style propotion is different and mixing is different, this batter for dosai l be soft , but for idli it won’t workout ! For people who don’t know for idli it should be 4:1 ratio (4 parts rice , 1 part urad dal , a spoon full of fennugreek seeds ) grinding separately and mixed with hand for natural yeast formation fermented for 8 hours

I am from uttrakhand and we still use heavy stones ( Sil Patta) to make chutney similar way the Amma did here.
