I've been making a very similar recipe for a few years, usually reducing it just a little more before reintroducing the chicken thighs to cook to 175° F (79° C). The only thing I noticed is that I thought you put the garlic in too soon. The onions should be pretty-much done (caramelized) before adding chopped, fresh garlic, otherwise the garlic may burn. Garlic only needs to cook until it is fragrant- about a minute or so. Also, I add about a tablespoon of Dejon mustard to my sauce to enhance flavor, although it is not necessary. I do like your videos, thank you for taking the time to create them.
