For new cooks, you want to leave the sour cream on the counter for an hour or two before adding it to the pan. If it’s cold, right out of the fridge, the sauce will “break” instead of blending smoothly like we see in the video. 😎
found this yesterday and cooked it tonight (12-22-2022). I didnt want to go out and buy Hungarian Paprika, so I used Smoked and "regular". Added a tad shake of powdered red pepper for flavor and followed the recipe from there. OUTSTANDING!!!!!!!! This video is now marked in my favorites so I can do it again!!

As a hungarian, you should know we arent using olive oil, usually only lard or sunflower oil. Recipes are variable but some ingredient are just not used widely in the hungarian cuisine. Olive oil is one of them.

This dish is called paprica's csirke. I learned to make this in Budapest 20 years ago on an exchange program between Budapest and The Netherlands. Together with the onions, you need to bake one or two diced paprika's. It wil enhance the flavour. TRY IT!!
This is very similar to Chicken Peprikash, which is also delicious. I would not add salt. The dish does not need it at all. I would add the ¼ teaspoon of Cayenne pepper to add that little more zip to the sauce.
This Hungarian kind of chicken is delicious, I did it yesterday. We live on Canarian Islands and I love also this meal with white paprika that our friends from Budapest cook. THANK YOU😘

Chicken leg quarters are my favorite parts and usually cook them in my air fryer but my goodness this recipe looks wonderful. Loaded with garlic, onions and tomatoes puts it over the top for me, and my arteries are singing! Hard to not drool on the screen. Thank you!
My wife’s parents escape from Hungry during the Hungarian Revolution. They loved Hungry so much and were extremely proud Hungarians that once they became US citizens, they would visit the country almost annually. My mother-in-law was the best cook, who would cook some of the most fabulous Hungarian dishes for the family. Sadly, she recently passed, but due to heath and age it’s been a long time since we’ve enjoyed her cooking. I decided to take a chance and cook my wife a Hungarian dish for Valentines. After doing some search I came across your video. You were so detailed and made it seem so easy that even I couldn’t mess it up. It’s fantastic, this dish is extremely tasty and a HUGE success that it impressed my wife. I wish my wife’s parents were still with us so they could try out my Hungarian cooking. Mom would probably kid me about it, which meant it was good. My next dish will be German for my bother-in-law and his mother who came from Nuremberg. Thank you for making cooks like me even better. I made this recipe tonight with chicken thighs. My wife and I both loved it. None of the flavor are too strong but it is not bland either. I don't know how anyone would mess up this recipe. So easy and seems very forgiving. I'll definitely check out your other recipes.
I LOVE chicken Paprikash! My Grandma made it all the time, and passed the recipe down to my mother as well. Whenever I visit home for the Holidays, it's the first thing I request her to make. I would recommend the extra effort of making the spätzle from scratch!
A Hungarian friend taught me to make this dish, only she didn't use tomatoes and added a lot of mushrooms instead. The sour cream provided all the liquid necessary. For those of us who can't use deadly nightshades like tomatoes, mushrooms are a great substitute.

@@pixiedixie5508 Basically it's not. Csirkepaprikas has a couple of tomatoes and 'white' fresh peppers but no tomato sauce! Also needs some marjoram. There is paprikascsirke and csirkepaprikas. They are not the same thing. Same as krumplipaprikas or paprikaskrumpli.
I love this dish my grandmother always made this for us when we visited her every Sunday . I miss her she was a great cook, she worked as a chef in a Hungarian restaurant.
Traditionally you would use a lot less tomato and some bell pepper diced (1-2 tomatoes + 1 hungarian bell pepper) and a lot more water or stock (usually water), season with salt, pepper and ground cumin and in the end we'd add a mixture of sour cream and flour. The dish is usually served with galuska (spatzle) and cucmber salad (sweet & vinegary)
@@8676karad this!!!!! cumin is another spice! we use caraway seeds! most of the time whole, "popped"(toasted on the fats) as my grandpa taught me. For gulyás (goulash), csirkepaprikás (chicken paprikash), pörkölt and tokány (lot like this recipe but with pork) and rizseshús (pörkölt with rice) also!

When my son was in the army, he got to have Hungarian Paprika Chicken while on leave in Budapest and loved it! This from a son who is not into anything more than basic meat and potatoes! He asked if I had a recipe for it (which I did as I had just acquired a Hungarian cookbook) and if I did, would I make some for him. Of course, I said yes! Цитата из Википедии: "Родина красного стручкового перца - Южная Америка. Культивируется также в Испании, Турции, США и Венгрии. В Европу паприка была завезена Колумбом". Сейчас и в Московской области вполне себе выращивается, в промышленных масштабах )))
Вполне можно обойтись без духовки - после того, как посолите и поперчите ножки, обмажьте их горчицей, они очень правильно замаринуются ))) У меня мама почти всегда так делает - не любит она духовку.

Hungarian Paprika-- one of the most underrated & underused spices. This looks just fantastic, the oven browning and that sourcream sauce over egg noodles. Yum.
Not in our house hold! We use the sweet version and the hot version and the smoked of both. Paprika powder finds it's way into most things including Indian dishes for the colour, on humous, roast chicken, lamb, beef, hams, sauces in fact I would go as far as to say it's the most used spice in Europe too, particularly the mild one which also finds it's way into "almost' every sausage. When we could only get two flavours of crisps one was paprika the other plain, this was the state of affairs for decades and decades and is still basically the desired choice, the only addition a spicier one. In Europe "seasoning" is salt pepper paprika LOl. We used to joke it was the only flavouring ever used in places like Germany.

What a great recipe! I am 50% Hungarian & 50% Irish & My childhood was filled with my Mom's delicious cooking. I'm looking forward to preparing this for my Italian husband & my family! Magyar is the saving grace!🤗
I'm German and Polish will be making this today, have it prepped ready to go but I doubled the recipe , and used tomatoe sauce instead of crushed tomatoes .

I made this recipe tonight with chicken thighs. My wife and I both loved it. None of the flavor are too strong but it is not bland either. I don't know how anyone would mess up this recipe. So easy and seems very forgiving. I'll definitely check out your other recipes.

I LOVE chicken Paprikash! My Grandma made it all the time, and passed the recipe down to my mother as well. Whenever I visit home for the Holidays, it's the first thing I request her to make. I would recommend the extra effort of making the spätzle from scratch!
A Hungarian friend taught me to make this dish, only she didn't use tomatoes and added a lot of mushrooms instead. The sour cream provided all the liquid necessary. For those of us who can't use deadly nightshades like tomatoes, mushrooms are a great substitute.

One does not add tomatoes to a paprikás, that is just utter, Italian nonsense.
(BTW if you use tomato sauce like this you need to add sugar to it).

@@pixiedixie5508 Basically it's not. Csirkepaprikas has a couple of tomatoes and 'white' fresh peppers but no tomato sauce! Also needs some marjoram. There is paprikascsirke and csirkepaprikas. They are not the same thing. Same as krumplipaprikas or paprikaskrumpli.
I love this dish my grandmother always made this for us when we visited her every Sunday . I miss her she was a great cook, she worked as a chef in a Hungarian restaurant.

Traditionally you would use a lot less tomato and some bell pepper diced (1-2 tomatoes + 1 hungarian bell pepper) and a lot more water or stock (usually water), season with salt, pepper and ground cumin and in the end we'd add a mixture of sour cream and flour. The dish is usually served with galuska (spatzle) and cucmber salad (sweet & vinegary)
The good thing about chicken is almost all spices and vegetables will work well.
Hungarians never ever use cumin...that is a middle eastern popular spice. They/we use caraway seeds.
@@8676karad this!!!!! cumin is another spice! we use caraway seeds! most of the time whole, "popped"(toasted on the fats) as my grandpa taught me. For gulyás (goulash), csirkepaprikás (chicken paprikash), pörkölt and tokány (lot like this recipe but with pork) and rizseshús (pörkölt with rice) also!

I agree with everything except the cumin. We Hungarians don’t use cumin.

When my son was in the army, he got to have Hungarian Paprika Chicken while on leave in Budapest and loved it! This from a son who is not into anything more than basic meat and potatoes! He asked if I had a recipe for it (which I did as I had just acquired a Hungarian cookbook) and if I did, would I make some for him. Of course, I said yes! I prepared this chicken recipe tonight, I substituted Thighs instead of drumsticks. It was a total hit. I'll add this recipe t o the card file and make it often. I may add sweet peppers to the sauce. Thanks a bunch

@@ВалентинаАсовина Венгерская паприка ничем не отличается от любой другой паприки. У нас этот перец обычно называется "сладкий" или "болгарский" (потому что в СССР его ввозили из Болгарии).
Цитата из Википедии: "Родина красного стручкового перца - Южная Америка. Культивируется также в Испании, Турции, США и Венгрии. В Европу паприка была завезена Колумбом". Сейчас и в Московской области вполне себе выращивается, в промышленных масштабах )))
Вполне можно обойтись без духовки - после того, как посолите и поперчите ножки, обмажьте их горчицей, они очень правильно замаринуются ))) У меня мама почти всегда так делает - не любит она духовку.

Hungarian Paprika-- one of the most underrated & underused spices. This looks just fantastic, the oven browning and that sourcream sauce over egg noodles. Yum.
Not in our house hold! We use the sweet version and the hot version and the smoked of both. Paprika powder finds it's way into most things including Indian dishes for the colour, on humous, roast chicken, lamb, beef, hams, sauces in fact I would go as far as to say it's the most used spice in Europe too, particularly the mild one which also finds it's way into "almost' every sausage. When we could only get two flavours of crisps one was paprika the other plain, this was the state of affairs for decades and decades and is still basically the desired choice, the only addition a spicier one. In Europe "seasoning" is salt pepper paprika LOl. We used to joke it was the only flavouring ever used in places like Germany.
