I made this last night and it was great! I substituted parsley with basil ( because that’s what I had). I STRONGLY RECOMMEND seasoning the onion, potatoes and carrots skillet with some multi purpose seasoning and rosemary. Next time I will cook potatoes a little longer before putting in the oven because it took longer than 25 min to get the potatoes fully cooked and the chicken didn’t need as long. I also added some chili flakes to the sauce mixture for a little kick, which was perfect. Great recipe. Thank you!!!

Just made this dish....absolutely yummilicious, in an uncommon but easy-to-appreciate kind of way!! Given the highest score by my two little ones (13 and 10 yrs.)!!! I added some white wine to deglaze the bottom of the pan and to lap up the fond after searing the chicken. Baking the whole pan in the oven does wonder for the texture and taste. AND THAT SAUCE.....!!!
So absolutely good!! Didn't put lemon juice. I added about a tablespoon of hoisen sauce to the sauce. I used full Italian season instead of just oregano on the chicken with salt and pepper. Busting with flavor and textures!!!
That pan of oil after you fry the chicken gross me out . I would pour away at least half of it . Pour it into used newspaper and discard into compost bin .

I would discard the chicken fat all together and use a neutral oil instead with just a dab of chicken base to bring the flavor back up. I make a dish similar to this one but I use a Chinese rice wine which adds tons of flavor..
you could put the thighs skinside down (no oil) in the pan cold and bring the heat of the pan and chicken up together. You will create an amazingly light crispy skin while rendering the fat out of the skin which will give you plenty of fat to cook the whole dish in.

Funny but true, everything I cook is a "one pan" recipe because I literally only own 1 pan, and 1 pot. That's it, period. Makes you get creative when you cook. I'll give this one a try for sure, I love chicken thighs
