    Sichuan basin is very humid, especially in summer time. In Chinese medicine, humidity can invade human body and cause various health issues. Sichuan pepper and some other spices, which give you the spicy numbing sensation, can help mobilize your blood circulation and get rid the humidity form your body. If you cannot handle spicy food that well, you can ask the vender to put less spices in the dish by saying 'wei la' (微辣), and you can have some cold yogurt which can also neutralize the burning sensation.

    A lot of times if the name of a dish starts with a person- in this case a couple- it refers to the original creator of the dish, like in Ma Po Tofu, Ma Po means ‘granny with pockmarks’, the old woman who supposedly first made this dish and became famous for it

    I vaguely remember that the original dish name was Husband and Wife leftover slices “夫妻废片“, and the modern menu changed “leftover 废’ to "lung 肺" with the same pronunciation. The origin of the story was that in ancient times, a couple used leftover meat or offal from mainly beef from various restaurants to make delicious but very cheap food. Although this presentation wasn’t that great, the same ingredients mixed together make it more delicious. There was no lung in the dish at all😂

    If you have chance to be in another sichuan restaurant, show this to the waiter: 回锅肉,麻婆豆腐,宫保鸡丁,辣子鸡丁,水煮肉片,蒜泥白肉,口水鸡,椒麻鸡,拌牛肚。。。These are the signature dishes, I can't let you leave China without trying them. And if you should definitely try 西红柿炒鸡蛋 (tomato scrabbled egg) at any restaurant. I never met a foreigner who doesn't like it.

    In the Chinese dining culture, they share pretty much everything, which is very different from the western customary. So unless you’re ordering rice bowls, the dishes are meant to be shared among the group. You’d notice sometimes each person would have their own bowl/plate so they can share. This means you don’t always order the same number of dishes as the number of people at the table.

    Glutinous rice cake is basically the basic ingredient of mochi (which is glutinous rice pounded to be more chewy). Chinese love glutinous rice and have it in many different types of dishes both sweet and savoury versions.

    Couple's lung slices is a very famous Sichuan dish. In tbis dish, you can find beef brisket slices, beef tripe slices, beef tongue slices, and the jelly looking slices are made of beef sinew slices.

      实际上,那是一个简写,一对夫妻的小店用内脏等食材制作的拌菜,食材实际上不包括猪肺或者牛肺。内脏因为有异味制作为好吃的食物很难,曾经非常便宜,现在因为制作方法公开,而且有人有特殊的技巧能做得更好吃,所以现在内脏已经不是一种便宜的食材了。实际上是废(废弃),肺的读音和废同音所以导致演变为这个名字

    Fuqi Feipian夫妻肺片 or as ur translation app says, a couple lungs slices 😂, does not actually contain lungs. normally sliced tripes and sliced tendon(the translucent thing you see in that dish) soaked in chili oil and some crushed peanut.
