About 15 years ago, "whether to allow customers to bring their own drinks into restaurants" caused great controversy in China.
The final result is that the customers won and continues to today.

Hi Luke and Neomi, glad you're enjoying your time in China. The sauce you put in the soup is actually vinegar. A lot of chinese people like dip their dumplings or wontons in vinegar. Next time you may just ask for a condiment dish or a small bowl. Put the vinegar or soy sauce or mix both together and dip your wontons or dumplings in it. Both styles of wonton you've ordered, in soup and in chili sauce, are popular in China. Fun fact, even though they are both actually wontons. In soup style, we would call it wonton(雲吞). But in sauce style, we would call it "Chao Shou" (抄手). That's actually stated at the name of the store you went to. I guess Chao Shou/wonton is their specialty.

23:15 that was not soy sauce but dark vinegar. lol A lot of Chinese people like mixing in vinegar with dumpling or noodles. It adds a bit of a sour kick and it can somehow make the spices less spicy. Have some cold milk or yogurt. They can help alleviate the spicy and numbing sensation.

21:40 chop stick should be holding towards the upper end at 60 to 70% spot. The lower one rest on your middle finger and the upper one should be held by your thumb and index finger(by pinching). The thumb and index finger control the upper chop stick to move up and down to pick stuffs up. Chop stick operates like a tong while your hand holds the both pieces together. They always operate in a parallel manner, at no time forming an X. When picking stuffs up, your palm face upward usually gives a more stable result and very rare case your palm should face down unless you reach to grab stuffs far away. Moderate or light force should be use. If you're fighting it, it's wrong.

There are no restrictions on foreigners. Only those who have been there will know how sacred the snow-capped mountains and lakes are.Tibet is a holy land of Buddhism, with snow-capped mountains, lakes, and many rare animals. Sichuan Province is adjacent to Tibet Province. You can travel to Tibet, but be aware that the plateau is hypoxic, so it is best to take the high-speed train there.

The 'tofu' thing that you referred to was called '凉粉(Cold Jelly)' I suppose. It is made of green beans or rice soup and it is solidified via lime(a kind of edible chemical). If you did not taste any flavor of beans then it was probably made of rice, which is Chengdu special. Though I have lived in Chengdu for more than 20 years, I hardly see this dish sold in a whole chunk. Usually it is chopped into small cuboid like very thick noodles and mixed with the sauce.

One reason why Chengdu is popular is that it is a core tourist transit city in southwestern China. Many tourists from coastal cities such as Shanghai, Guangzhou, and Shenzhen choose to come to Chengdu first. In addition to the famous hot pot and pandas in Chengdu, there are also many first-class popular scenic spots, such as Wenshu Temple, Kuanzhai Alley, Wuhou Temple, Du Fu Thatched Cottage, Panda Base, etc. These scenic spots are relatively dense in the urban area, and there are also many relatively small but distinctive places worth visiting (such as Dongjiao Memory). The total number of these scenic spots is actually quite large.
After visiting these places, you can leave Chengdu and go to the surrounding areas. The famous tourist attractions are Dujiangyan Irrigation Project, Leshan Giant Buddha Scenic Area, Qingcheng Mountain, Mount Emei, Huanglong, Jiuzhaigou Valley Scenic and Historic Interest Area and so on. The second scenic spots will be more, and you can go further to Yunnan, Xizang, Xinjiang and other places. So Chengdu has become one of these tourism destinations

In China, cold food is most commonly consumed in the summer, but not in the winter. As you know, protein from tofu i.e. soybeans is healthier than that from meat. To be an attractive tourist destination in China, it has to be made of the following three beauties: Beautiful sceneries, beautiful/yummy food and beautiful people admixed over and over again, a case in point is the so-called 8D punk city of Chongqing.

In fact, I really recommend that you visit Hangzhou after your trip to Chengdu. It is the city that best represents the "Jiangnan" with a blend of the bustling and open atmosphere of Shanghai and a strong cultural atmosphere rooted in Chinese tradition. It was also the center of ancient Chinese culture, and many famous literary figures from Chinese history have left behind poems there (similar to Athens in Greece? I don't know).the scenery of Hangzhou is printed on the currency. But I suggest you come in spring or autumn (Mar. to May, Oct. to Dec.)

There are many types of tofu in China and the one you tried is one of them, the tender one, which is mostly just slightly cured soy milk. It’s commonly used in cold dishes seasoned with vinegar, chili and maybe soy sauce.

I'm from Chengdu, Sichuan. The jelly-like tofu is called lactofu, and the one with bean sprouts is called cold noodles. I guess you can't eat Sichuan peppercorns. It's very numbing. In China, only Sichuan people like it in their diet. Add Sichuan peppercorns. Remember to ask the restaurant owner not to add Sichuan peppercorns next time you order. If he doesn’t understand English, you can use a translation software to tell him.

Rule of thumb, if the restaurant only sells a limited menu then it is specialized and usually good at making the limited items. Also, restaurants are a very competitive business in Asia so the prices are too competitive relative to the USA/Europe. Limited barriers to entry as it keeps prices down.

When you guys get to Shanghai, there's a place called "Jia Jia Tang Bao" on Huang He Road, near people's square. It's a little down to earth eatery, but is literally the best Shanghainese style dumpling in the world. It's a delicate style of dumpling which has soup inside, some people like to suck out the soup, then eat with some ginger and vinegar. Must try.
