@@KennasKitchen I put them in a steaming basket in a pot with a lid like steamed vegetables and cook them for about 15 to 20 minutes. This gets rid of allot of undesirable fats in the skin that make it hard to get crispy, although enough fat stays for flavor in the meat. In my experience it makes them fall off the bone easier. Refrigerating them after steaming does the same thing you mentioned and dries them out.
My Ninja XL Grill came with the cover as part of the unit sold at Sam's Club. $80 off with the packaged extras was a nice deal, and the XL model is larger and comes with two temperature probes.

Hi Kenna, I tried these today following your way of cooking, I even put them in the fridge before for 3 hours to get REALLY crisp skins. Well, mine was a fail. I did just like you did except I didn't go the total of 20 minutes. About 15 minutes in they temp at 200 and more, I was afraid to over cook them so I pulled them then. They were not crispy at all. Were yours REALLY crispy? I was so disappointed. Let me know if you have any ideas. Thanks

Really like the "Butt Rub" for pork, thats definitely a staple dry rub in our house. Chicken is so versatile, that really any rub will compliment it. Just make sure you pick a sauce that compliments the rub as well.
If placing the wings in the fridge overnight after seasoning, should the addition of the oil be a part of that process, or would it be more beneficial to spritz the wings with oil, just before placing the wings on the WoodFire? TIA.
I would add the oil when adding the seasoning. Then just make sure you’re Woodfire grates are oiled well so there’s no sticking there. The dryer the skin on those wings, the crispier. So put that oil on early if you can:)

You can fit a small chicken in there. If you are talking about the unit I have in this video, you can fit up to an 6-8lb chicken. If you wanted to spatchcock it then maybe a 4-5 lber.
Should we be igniting the pellets later? Seems strange to ignite it for preheating and the smoke just goes to waste because the food isnt even in there yet
I honestly use whatever I have on hand. Could be Weber, could be traeger, could be briskit, he’ll it could even be Costco brand. Most all of them work interchangeably:)
Tried this yesterday. Followed your instructions. Wings were not crispy. Actually soggy. I checked them with a thermometer and they were 175 so they were done. I think the oil may have been the killer. I used olive oil. Should it be vegetable oil or does it matter ? Gonna try again and just use the rub.
Thanks for responding. I dried them when I took them out of the package and then put them in the fridge for 3 hours. Normally I just throw them in the regular air fryer. They tasted OK and were done. Just no crispy skin.

I tried a batch that was dried and dry rubbed, only used 15 wings as I thought maybe I had put too many in the basket. They were better but still soggy. Did another batch with vegetable oil and rub. They were more soggy than the non oiled wings. Yes the wings were done and they tasted good but if anyone can find a way to make crispy wings in this cooker please share. BTW... I bought this cooker for the RV so I'm not disappointed with its size and funcionality...yet

I’d be interested to find out what they put into their pellets. There are many pellets on the market that have all kinds unnecessary additives and chemicals. And then there are pellets that are more pure and natural. Definitely want to be careful to only burn quality pellets when the smoke is going on your food.
Yes, I would also like to know. I have used a couple different types of pellet brands now on the ninja and all of them burn just fine. So I would say choose what you prefer, and not by brand!
Ninja probably say 30 mins @ 390 because the average operator will take out cold wings seconds before grilling. They’re just making sure the average user doesn’t get salmonella

Very expensive compared to traditional grills and smokers but is really priced for apartment dwellers and RV travelers I would believe. Also, yes, this isn't going to be nearly as smoky as a true stick burner, but it does give people the opportunity to incorporate smoke into their meat!

@@elem2992 if you let them air out and lose the moisture in the skin, they will be crispier! So I would do this by lying them on a rack patting dry, and placing them back in the fridge on the rack for a couple hours.

Or make a rub with baking powder. The baking powder hack will crisp up the skin. Nice recipe btw.

is there any advantage to using the basket and air crisp setting vs putting them directly on the grill and using the grill setting?
The grill mode only uses the bottom heating element, while the air crisp mode also uses the top heating element.
They have the XL out too.

@@kmain0 Yes on the 15 amp, I used a 12 gauge 25 ft, but they recommend a 10. This is made for home use, so 15 amp is right.
what would happen if you did 2 layers of wings? We have 5 adults to feed so would need more wings than you have in the video.
