  • I get asked about how I get my organ meats in or if I even eat them. I actually do enjoy some organ meats. I think they are a super food for sure, but whether or not you like them or not I think you can try some of these options to see if they can be worked into your way of eating.

I'm with you. Liver pate is the best! Funny thing, back in the early 80s I was feeding 4 children on a very limited budget. Beef liver was super cheap, so I would grind it and mix half and half with hamburger. My kids never knew.

Update for you and Dr. Berry (since I don't have social media) ❤: After asking my question about increased milk supply and keto foods to help, then also doing some more research (including watching your husband's video about liver and vitamin A) I started eating beef liver (pan fried in butter with salt and pepper ... made a delicious keto pate one day to mix it up) every day because I was having issues with low milk supply and low ferritin (but iron levels were normal); I have so much more energy and have been able to pump double what I had been prior (I had been nursing then pumping every 2 hours for four months after having a preterm baby and my milk supply remained insufficient). I am still nursing and pumping but about every 3 hours now and he is satiated at the end of his feedings. We also started trying out BLW with liver, beef steak, and pork ribs ... it's a slow process because he loves his breastmilk 😊
Thank you (and your husband) for posting these videos and for having your monday Q&A sessions!

I have made the chicken liver pate you featured. (Kim Howerton’s). It’s rich and delicious. I put a butter seal on top of each jar to keep it longer. I froze what I wasn’t going to use within 2 weeks in 3 oz servings. I prefer chicken liver for pate, but I eat beef liver cooked medium rare. I thoroughly trim my beef liver to remove all veins and connective tissue. I don’t mind eating gristle in steak, but in liver….it’s yuck. That was the big turnoff when my mother cooked liver, not the flavor. Also over cooking is a big NO.

So good. I spread it on keto crackers or in lettuce with other veg, I make chopped chicken liver several times a year. For holidays, just because. It is just chicken liver, cooked onions and hard boiled egg. So good, I have been dabbling with beef liver and other organs in my seasoning (Eat Pluck) and I am getting my delivery of Meat Flour tomorrow. Very excited. I’ve been using Pluck Pure (just organ meats) in my burgers lately. No one knows it is in there,

My mom made liver when we were kids and I liked it, but my nose began wrinkling at the thought of it when I became an adult for some reason. So I haven’t eaten it in a couple of decades. But I just so happen to be moving into a ketovore lifestyle and just today (coincidentally) purchased calf liver. I am a little nervous and hoping it can taste as it did when I was a kid and that I don’t still have an aversion to it. I will have to make it much different than my mom did (no gravy and onions), so I am a little worried about gagging, but I’m gonna give it a go.

What give up the gravy and onions? Use xanthan gum and bacon grease as the thickening agent instead of flour . I use it all the time for thickening.. Just a note it doesn’t take all that much to work and it takes a little longer on the cooking time before it starts to thicken.

I bet a Vitamix may make some beef flour out of dehydrated round ?

    • @nancycy9039
      @nancycy9039 ปีที่แล้ว +2

Yes, they are outrageously expensive, though it may help some to remember that these are dehydrated meat products. A pound of dehydrated celery is also very expensive if you compare the price to fresh with it’s water content. I don’t think the price comparison of fresh to dried is useful.
However, the price comparison per grams of protein between fresh and dried IS useful. The crisps are VERY expensive but not as bad as it looks at first.
I do this with all my meats: for example, when comparing protein gram for gram, hot dogs are often as expensive as beef ribeye. And deli meat is way up there, too!

My 2 daughters are almost 2 years old and 1. We do organ meats ground into our hamburger or just straight up organs. I’ve been mixing desecrated organ supplements into raw goat yogurt too. We do pate as well.

Introducing flavors to babies can truly broaden their acceptance & enjoyment. If potential resistance, just start slowly with very small amounts mixed un-noticeably in untill their taste buds accept it. Then slowly increase.
We can do this even with our adult formed tastes too. I slowly (pre-Keto) switched to stevia that tasted bitter to me.
It took about 3 months to not need any sugar at all🎉

Oh I so wish I could get any organ meat past my nose. The smell alone puts me off. I may try some goose liver again. I do try a taste anytime someone else makes it but not much has changed.

I have always liked beef liver; I fry it in bacon grease with no flour. You have to make sure not to cook it too long as it will dry it out. ❤

I am carnivore, it has been a bit challenging for me a gristle and fat always grossed me out when I was a child. I make bacon chips now and am slowly cooking for less time….and I like it! Liver has been a childhood gross out for me. My parents never “made me” eat it, but for some reason I gag. For now I have been taking dehydrated liver capsules daily. Is this acceptable/ ok until I can bite the bullet and eat it fresh cooked? Thoughts anyone?

One person I read say’s she cuts liver into “ pill sized” pieces then freezes them, takes them out and swallows them with water like pill’s, she say’s it has transformed her skin😊

My butcher hooks me up with warrior burgers: he mixes in heart, kidney & liver into 80/20 ground beef. Yum. At home, I marinade organ meats in whole raw milk overnight to minimize the organy taste.

I only like Braunschweiger. I know it's not perfect, but it's the best I can do.

I eat ground liver in my ground beef and it’s good. Does not taste like liver. I’ve tried eating just liver and couldn’t do it. I had to make myself swallow the tiny bite I took.

Look into making your own sausages. It only takes a couple of hundred bucks worth of capital expense to set yourself up.
The best way to mix nose to tail.

Kidneys....🤮 I had a bad expereince eating it as a child. Can handle chicken livers. I think they are a good way to start eating organ foods. 😊
