Hi Chef Zee! I'm Jamaican and what you guys call Bacalao we call saltfish and just a recommendation when my mom makes saltfish she just runs it under some cold water to get the salt off and then immediately boils it and switches that water once and that can take 30 minutes all together if you wanted to cut down on time sometimes she doesn't even switch the water but of course we're making something different🤗

I Love Bacalao Guisado with alot of Jugo/Gravy. My Abuela made it Differently though she added Okra, Potatoes, Onions and Chopped Garlic. It was like a Sauteed but I'll add Extra water SECRETLY when she's out the kitchen cause I like Gravy/Jugo!. She knew, she knew what El Chef Babe Liked! Lol
The way my mom show me is boiling water with the bacalo then throw away the water twice. But I'm going to try this way or and another way is leave the bacalo overnight in water

I use the same ingredients in your recipe including potatoes but i also add greens to mine and stewed or diced tomatoes and white rice on the side.! Definitely a game changer 😋🤤
In the Philippines we also have Bacalao Guisado. Bacalao Guisado Caviteño, from the province of Cavite. We fry our patatas, and we add garbanzos, repollo and achiote (achuete in Philippines).

Finally I can make it myself! I accidentally stumbled upon this meal and have never forgotten it. Actually after work on Fridays I visit this specific restaurant, and today it just occurred to me look for the recipe on TH-cam. Now I can make it for my friends to enjoy! Do I have to use olive oil? I don’t really like it.
@Fausta Uwague: You can use any oil you like, I use canola and corn oil and anyway it comes out delicious or if you don't like oil at all don't add it, as I said it comes out delicious anyway. 😊
Im from Cavite Phillipines this exactly what we cooked during lenten season but the difference is in the Philippines we dont have cod fish instead we used surgeon fish as an alternative. the preparation and Ingredients are also the same but we dont use too much herbs. Cooking Bacalao is part of our tradition

Just made this without the fish and it was amazing. Thanks for posting this video. I used 1 cup of water from the pot boiling the potatoes. I feel the startch in the water helps thicken the sauce. Question. Is there a good reason for using the salted fish as opposed to just using fresh cod? Seems it would save some work.
you can also boil water with the bacalao & drain the water after it boils. Do this 3 to 4 times to remove the salt if your in a rush to cook it. After this process rinse in cold water, than drain & shred. Than cook to your liking Yummy!!!
hey chef zee just curious right if I wanted to make this but like I'm super busy and I can't do the 15 minutes thing about how many hours do u think I should let it soak in water ?
Between bacalao, goat, pernil and oxtails so hard to even attempt. But the bacalao dish I grew up more was the bacalao cold salad- bacalao, white/red onion, ‘uyama’ I think, potatoes and boiled eggs... am I the only one who like this or heard of this dish?? They do not make this in some nyc Dominican restaurants.

I’ll sometimes add sugar during the boiling process to help with salt removal, something I’ve learned from my mother.
