one of my fav breakfasts right now:
1/3 cup oats, 1 tbsp peanut butter, 1 tsp maple syrup, cinnamon & pinch of salt, mixed to make a crumble and then put on top of a sliced peach in a ramekin & bake for 10 minutes, it’s like a healthy peach crumble 😻😻😻

a breakfast I just made for myself is a tempeh """bacon""" sandwich. really tastes nothing like bacon, but its still really delicious! I cut the tempeh into strips and let them soak in the marinade overnight (3 tbsp olive oil, 2 tbsp smoked paprika, 1 tsp liquid smoke, 2tbsp soy sauce, 1 tsp maple syrup, salt and pepper) and then airfried them in the morning! it also works if you panfry. Super good with hummus or vegan cream cheese

The quickest 3-5-minute savoury oat recipe I make all the time, but might be a bit out there haha: 1. prepare oats with hot water in a bowl to save time 2. heat up a heap of frozen peas in a pan and the put them on the oats 3. roast some cashews in the same pan 4. pour soy sauce and lemon juice or white vine vinegar over the oat/pea mix 5. top everything with the cashews, salt & pepper and maybe smoked tofu, sriracha mayo - anything you have on hand... I usually have this for lunch or as a snack, but sometimes also for breakfast. Anyway, thanks for the beautiful and calming video as always Mina ❣

My easiest yet favorite of all time breakfast is Tofu avocado: Just chop in cubes the firm tofu, fry with a little bit of oil till golden brown and when is almost ready just add salt and pepper. Then in a bowl add half an avocado or whatever amount you want, add lemon, salt and mix it with the tofu, enjoy over a toast or rice. You can add chopped onion and tomato if you want to. 😋

hey mina! for a cozy fall breakfast, try a cup of vegan yogurt with 1-2 tbs of pumpkin puree, then add pumpkin pie spice, cinnamon, and cocoa powder---top with blueberries, cacao nibs, muesli, and a pinch of brown sugar! so yummy 🧡

ohh what I've been eating for the past year or so and can't get sick of, are also savory oats!
    how I make mine is:
-40-50 grams of oats ( I prefer the kernigen haha)
    -veggie broth
    - mushrooms (I sometimes use fresh ones but when I don't have them I use the ones in the can)
    - lemon juice
    - a hand full of parsely
    - sesame seeds
    - garlic powder
    - ofc pepper and some salt if the broth isn't enough
    - sometimes I add some spinach if I have some
    - a tablespoon of nutritional yeast
    - and the most important thing !! one biiiig tablespoon of good tahini
    - i also like to add some tofu or some canned chickpeas
so I cook the oats like normal in the veggie stock until they're soft. if im using fresh mushrooms ill cook them with the oats, if not then ill just put the canned ones in after the oats are creamy. and if im using tofu ill also cook it with the oats so it gets a bit more soft. when its done cooking ill turn the heat of and just add all the other stuff haha and lastly ill stir in the tahini!!! the tahini makes it all super creamy and its just so good!!! I just love tahini so much haha
everyone always looks at me weird when I make it but hey they don't know what they're missing out on
i also put avocado on top and add a bit more lemon juice and salt and pepper and maybe some chili flakes and the sesame seeds !!!

The bell pepper oats reminded me of a vegan chili oatmeal that I sometimes make: Stir some tomato paste into veggie broth, add in your oats, kidney beans and sweet corn and let it simmer until the oats have soaked up some of the liquid and you have a nice consistency (however thick you want it). Then add chili and other seasonings to taste!

I currently love a good tofu scramble- fry half an onion with half a tomato, combine 1/3 block of tofu with Cala Namak, Cumin, Garlic Powder, Rice Wine Vinegar, Paprika Powder, little bit of Agave Syrup and 1 table spoon of Soy Yoghurt (in case your in Germany I recommend trying the VeHappy Soyghurt ungesüßt, you can buy it at Edeka or Netto, it's so good!). Add that to the pan and fry it for 2-3min. I serve it on toasted wholewheat bread with hummus/vegan cream cheese/ vegan mayonnaise. And maybe some siracha on top- Yumm!

If I take it with me I just put everything the night befor in a jar and grap it in the morning and try not to forget a spoon haha

i have another food idea for you that i saw from tiktok and absolutely loved! it is a rice paper omelette style dish, but the ingredients can be substituted to be vegan :)
    1) place a sheet of rice paper on a hot pan with no oil
    2) flip the rice paper until both sides get hot and turn to a crunchy texture
    3) add in a whisked egg over the rice paper and top with your favorite omelette ingredients
    4) once the egg is nearly done cooking, fold the rice paper over like a quesadilla and TA DA!!
a crispy and delicious breakfast :)

my go to breakfast that i always have the ingredients for in my pantry (and theyre generally ingredients worth having):
cook 1 cup oats of choice with 1 cup milk of choice (now's a great moment to add your daily chia and ground flax seeds intake)
while it's cooking add any (frozen) fruits of choice and eyeball some cardamom, turmeric and ginger powder
when it's cooked (consistency becomes porridge-like) you can top it off with more fruit and nuts and seeds of choice.
I find it goes really well with bananas and I top it with some tahini.

    Hi Mina,
In case you do another savory breakfast video, I have an idea for you. This morning I had something I call a breakfast wrap. I'm not vegan but it's sausage, bacon, fried egg and a hash brown or potato waffle covered in tomato sauce in a tortilla wrap. It's delicious! I recommend you give it a try obviously you would have to change it to make it vegan and I don't know how easy it would be to do that. Keep up the great TH-cam videos, I love them.

      okay, so
40g chickpea flour and 20g buckwheat flour (you can sub this one for all-purpose) mix with half a tsp of cinnamon and a bit of gingerbread seasoning, 3/4 tsp of baking powder and 1/4 tsp of baking soda, add also a bit of salt and something to sweeten, sugar or xylitol or whatever you want - one tbsp should be enough.
Then wet ingredients, 1/3 cup (85 ml) of plant milk, 1 tsp of vinegar and if you happen to have it, a tbsp of applesauce, but that is optional, i don’t use it often and it still comes out great.
Mix it all together, and let it rest while you chop up one small, or half a big apple into small pieces. Heat up the pan, and lightly grease it, then add the apple chunks to the batter and mix thoroughly. Add all of the batter to the pan, and fry under the lid on medium to high heat for approximately 5 mins, or when you see the bubbles appearing on the top, it has to be quite set on the edges. Then flip it with a wide spatula, and give it another 3 minutes on the other side, and it’s ready to eat :))
I like to serve mine with some vegan yoghurt and apple jam, or a jam from some another autumn produce like pumpkin or plums :)

@@taschak3889 I love apples and nuts for breakfast! I grew eating that way and always stayed lean! But now I’m almost 30 and have had 3 babies back to back! So I want something quick that gets back to eating whole foods but is short on prep time. I have very good self control and rarely if ever binge on “junk food” the only think that keeps me from eating healthier is TIME😅hence the apple/nuts breaky 💡
