    Hello there! Today I am back with another what I cook in a week type video (breakfast edition) with an emphasis on simple and cozy vegan recipes.     INGREDIENTS + NOTES
    #1 Quick Ginger Apple Oats 0:28
    ½ cup quick cooking oats (45g)
    1 tbsp chia seeds
    1 dash cinnamon
    pinch of salt
    hot water, just enough to cover the oats
    ½ tsp fresh ginger, shredded
    1 splash oat milk
    pumpkin pie syrup, to taste (or other sweetener)
    1 apple, shredded
    → serves 1
    #2 Kimchi Beans on Toast 1:54
    ½ can black beans (120g = 4,23oz)
    2-3 tbsp vegan kimchi
    1 tsp tomato paste
    1/2 tsp sesame seeds
    splash of water
    1 tsp agave
    1 tbsp vegan butter
    3 slices bread, glutenfree if u wish
    for the top: vegan chili mayo, fresh chives
    → serves 1
    #3 Persimmon Yogurt Bowl 2:57
    1 soft persimmon, peeled and mashed
    1 serving thick soy yogurt
    1-2 tsp vanilla protein powder
    handful of walnuts, crushed
    1 dash cinnamon
    1 serving granola
    #4 Cozy Banana Walnut Puddings 3:48
    for the pudding base:
    1 ¾ cup non dairy milk (440ml)
    ½ cup chia seeds (80g)
    1 medium ripe banana
    1-2 teaspoons agave, maple syrup
    for the walnut cream:
    1 cup walnuts (100g)
    6 deglet nour dates, soaked in hot water for 10 min OR 3 soft medjool dates
    1 tsp vanilla
    generous pinch of salt
    for serving:
    1 banana, chopped
    crushed walnuts
    → serves 4
    I adapted the measurements and ingredients slightly.
    OG recipe by cooking for peanuts: • NO ADDED SUGARS Banana...

    wet ingredients:
    310ml (1¼ cups) plant-based milk
    1 tbsp lemon juice
    80g (85ml = ⅓ cup) vegetable oil
    2 tsp vanilla
    dry ingredients:
    240g (2 cups) plain flour
    ¼ tsp salt
    130g (1/2 cup plus 3 tbsp) light brown sugar
    1 ½ tsp baking powder
    ½ tsp ground cinnamon
    2 chai tea bags filled with finely ground spices
    for the frosting:
    3 heaping tbsp room temp vegan butter
    pinch of salt
    1 ½ - 2 cups powdered sugar (180g - 240g), added in 2-3 stages until you’re happy w the frosting
    also: more walnuts for the top.
    → yields one 8 inch, 20cm brownie tin

    TAYLOR SWIFT CHAI COOKIE RECIPE: • I tested Famous People...
    #6 Five Min Rosemary Bean Toasts 7:00
    1 tbsp vegan butter
    1 clove garlic, minced
    1 sprig of rosemary
    1 can white beans, rinsed (400g = 14oz)
    salt, pepper to taste
    2-3 slices bread, toasted and topped w hummus or vg cream cheese
    #7 Homemade Winter Punch 7:39
    ½ orange, cut into slices
    ½ apple, cut into slices
    1 litre apple juice (4 cups)
    2 cinnamon sticks
    1-2 tsp vanilla extract
    1-2 cups (250-500ml) water, more if needed
    sprinkle of each: ground cardamom, ground cloves, ground ginger
    juice of ½ orange
    1 tbsp lemon juice
    2 tbsp sweetener (i did pumpkin spice syrup)
    2 fruity tea bags
    → serves 4
    #8 English Breakfast at a Cafe 8:48
    at froindlichst in pberg, the breakfast was alright, i’d give it 6.5/10
    #9 Vanilla Quinoa Porridge 9:17
    ⅓ cup dry quinoa (60g)
    ⅔ cup (160ml) water
    quinoa cooking instructions:
    bring the quinoa and water up to a boil
    reduce heat to medium low
    allow to simmer with the lid partially on top for 15 min or until water has been absorbed fully by the quinoa
    it’s ok if it’s not super soft at this point, since you’re gonna let it cook a bit longer with the oat milk right after
    Also needed:
    ⅓ cup oat milk (80ml)
    2-3 tbsp quick cooking oats
    1 tbsp vanilla protein powder
    1 tsp vanilla
    1-2 tbsp crushed walnuts
    dash of cinnamon
    pinch of salt
    for the top:
    apple, almond butter, agave…

    I have been watching your videos since 2017 and it's so crazy to think it's been that long lol I'm not even vegan but your videos are really aesthetically pleasing to watch and we have a lot in common I always watch your videos while doing random tasks like doing the dishes or cleaning my room it's like facetiming a friend i rly wish i got to see you when you came to nyc but maybe next time. Also here is a south asian recipe that you might want to try it is unintentionally vegan so I thought you might want to try it when you make another world food type of video
    The recipe is for a lentil soup curry type of thing you can eat with rice or bread
    Ingredients: 300 grams of Red Lentils (Also called masoor dal), 1 whole garlic, 1 tbp salt, 1 tbp red chili powder, 1 tbp garam masala, 2 tsp black pepper, 1 tsp turmeric powder, half cup of olive oil or vegan butter (make sure to use a fat with a strong flavor because the original recipe is made with ghee and it is a major component of the flavor but it's not vegan), 1 green chili sliced, 1L water
    Instructions: Soak the lentils in water for at least an hour to decrease the cooking time. After an hour, add 1 liter of water to a pot with the lentils, all the spices, and all of the whole peeled garlic cloves (keep 2-3 cloves for later) and cook on high heat until the water comes to a boil. Let it boil until lentils change their color to yellow and the curry becomes thicker. Keep boiling until the consistency is of a thick soup and there is little water left in the pot. Once the consistency is right, taste it to adjust the spices. In a sauce pan, heat up the oil or vegan butter. Cut the remaining garlic cloves into slices and fry them in the oil until they become golden brown. This is called a tarka. Add the oil and the fried garlic to the lentils and cook for about 5 minutes. Add more water if it is too thick or let it cook for longer if it is too thin. Slice the green chili into slices and add it to the curry. You can eat this with rice, naan, or any kind of bread, or even just on it's own.

    A few days ago, I had a persimmon so ripe it basically disintegrated into this soup 😄😄 had it with cacao powder, some walnuts and yoghurt, so good! Your recipe look so good as well 🧡

    Any tips on how to check if the persimmon is ripe? I've tried like two but they were awful and not sweet at all TT

      kind of like checking if avocados are ripe, you lightly press them with your finger, if there's an imprint it should be ripe!

      Persimmons have to be like SUPER ripe like they should look like they’re almost not good anymore lol. Some wrinkles in the skin and super super soft!

    By the way chai is just the word of tea in hindi so u just said "tea tea from the bags" lol, also wouldnt u want to extract the tea flavor? cuss i dont think the tea would extract almost anything straight with the batter¿?
