Unlike cellulose, it is water soluble and can function as a suspending agent, stabilizer, film former or thickening agent. CMC finds use in gluten-free baking by providing dough with viscosity and bread with volume much like gluten proteins do.
I tried it out, my gelatin and glucose mixture wasn't enough to knead it. Mine was hard even though I kept dipping it in water as I knead, when I was rolling it. It was drying out fast. Please ma is there any remedy?
@@queennduaguba618 Someone sent a review last week, she used Susan, she said it was too soft, that she had to add more icing sugar. I've not tried Susan with this recipe. It works perfectly with niella.

Because most icing sugar are not up to 1kg again. Using the entire 1/3 cup will make it too soft. Hence the removal.

The icing sugar I used was 1kg. This recipe works perfectly for all weather.

What brand of icing sugar did you use? Once you noticed it too hard, add a little water and knead till it's pliable.
